I know what you’re thinking.
“My golly gosh-er-oo, Taylor JUST posted that Mexican Lentil Homemade Hummus, and now she is posting ANOTHER Mexican recipe? Did her move to Washington make some cells in her brain even weirder, and now she only knows about Cheese + Salsa + Avocado?”
Well, the answer is no..BUT, even if that WAS the case, you really shouldn’t complain. Can cheese + salsa + avocado BE bad?
These Mason Jar healthy Taco Salads prove that no. It can’t.
You know what though? I used to hate ALL food that was from south ‘o the border.
And now Mexican cauliflower tater tot casserole is popping up, and then we’re eating healthy Mexican food for the second week in a row.
I don’t even know who I am anymore.
Let’s try to put aside the fact that I am having a pre-mid-life crisis and talk about ground turkey. I know, your favorite subject amIright?
Ground turkey may not be your usual go-to conversation starter BUT there is a story behind it. And, it involves Mr. FFF.
But, really, when does it not? It really is a good thing he doesn’t read this.
So. We were at Costco eleventy billion years ago, and the Hubs saw a HYOOGE (Bigger than my face and his face COMBINED) package of ground turkey (but, it’s Costco, I didn’t expect anything less.) and he decided we needed to buy it so that he could make buffalo chicken meatballs for himself. (<— that sounds like poor grammar, is it? Help?)
Fast forward one year later (ok, so it wasn’t QUITE eleventy billion,) we are moving from Florida and we need to eat as much food out of our freezer as humanly possible, so we don’t have to throw it out and waste it.
Guess what’s in the bottom. The double-face sized container of ground turkey.Ye-up.
Exactly what I figured would happen. The hubs can barely make healthy french toast, let alone meatballs. It’s really a good thing he has me or he might starve.
Then again, he could live off Cheerios. Sometimes I think he secretly wishes I would stop cooking so he could live off homemade cereal in peace.
I did what any self-respecting person would do: I mixed it up with some spicy, sexy-mexi (does that even make sense?) flavours and then covered it with aforementioned cheese and avocado salsa goodness.
And then it went for a ride in a little stuffed zucchini “boat.” Food likes to be adventurous too you know. We shouldn’t leave it out from fun life happenings like boat rides.
So, whatcha waiting for?
