This Low-Carb Crustless Pizza delivers all the cheesy, saucy goodness you love, minus the carbs.

Skinny Low Carb Pizza- You know that you want to know what keeps these low calorie, protein packed and gluten free, but with the same pizza taste! | Foodfaithfitness.com | #recipe

Pizza night doesn’t have to mean carb overload. If you’ve ever wished for the satisfaction of pizza without the heaviness—or the cleanup—of dough, this low-carb crustless pizza has your back. Built on a clever base of egg whites that crisp up into a sturdy, tortilla-like layer, this recipe proves that skipping the crust doesn’t mean skipping the fun.

Inspired by classic pizza flavors but with a lighter, protein-packed twist, these egg-white “crusts” are perfect for busy weeknights, post-gym meals, or anytime cravings hit. They come together quickly on the stovetop, then get a final broil in the oven to achieve that golden, bubbly finish. Top with turkey pepperoni, mozzarella, or whatever your pizza-loving heart desires—because when the base is this simple, there’s room to play.

Bonus: You don’t need to knead or proof anything. No dough. No rise time. Just real-deal pizza satisfaction, fast.

Is This Low-Carb Crustless Pizza Healthy?

Yes. Using egg whites as the base for this crustless pizza significantly bumps up the protein while keeping calories low. Turkey pepperoni and reduced-fat cheese keep the classic taste with a leaner profile, and you can easily tweak toppings to suit your needs. Need to keep it dairy-free? Try a melty plant-based mozzarella. Want more fiber? Add sautéed spinach or mushrooms. It’s naturally gluten-free, low-carb, and keto-friendly, but more importantly—it tastes like pizza.

The Magic Of Egg Whites

Egg whites are often underrated, but they’re a secret weapon in the kitchen for anyone looking to lighten things up without sacrificing structure or satisfaction. Packed with protein and naturally fat-free, they’re a blank canvas that can transform into everything from cloud-like meringues to sturdy, tortilla-style wraps—like the base of this crustless pizza. In this recipe, egg whites cook into a chewy, golden-edged layer that mimics thin crust pizza, ready to be loaded with toppings. Beyond pizza, you can use them to bind meatballs, fluff up protein pancakes, or wrap around fillings for high-protein enchiladas or breakfast burritos. Think of them as your go-to swap when you want the comfort of your favorite foods, made just a little bit lighter.

How Do I Store Leftovers?

Store leftover crustless pizza slices in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or under the broiler for best texture.

Serving Suggestions

These crustless pizzas are great solo but can be rounded out with a simple side salad, Roasted Broccoli, or Cauliflower Tater Tots. They also pair well with Gluten-Free Meatballs or Avocado Pesto Healthy Pasta Salad With Zucchini Noodles. If you’re craving more creative pizza spins, don’t miss Sweet Potato Pizza Crust, Cauliflower Pizza Crust, and Almond Flour Pizza Crust.

Prep: 10 minutes minutes
Cook: 20 minutes minutes
Total: 30 minutes minutes

Ingredients

  • 8 egg whites or 1 cup of liquid egg whites, divided
  • 2 tablespoons reduced-fat grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Pinch of salt
  • Pizza sauce and toppings of choice I used 2 tablespoons pizza sauce and 1/4 cup turkey pepperoni
  • 1/2 cup reduced-fat mozzarella cheese grated

Instructions

  • Preheat your broiler and spray a baking sheet with nonstick cooking spray. Set aside
  • Spray a small nonstick skillet with nonstick cooking spray and heat over high heat.
  • Once hot, reduce the heat to medium-low and slowly pour in 4 egg whites (or 1/2 cup of liquid egg whites). Cover with a tight fitting lid. Cook until the top of the egg whites are just set and slightly bubbly (about 2-3 minutes).
  • Remove the lid, carefully flip the egg whites, and cook for an additional 2-3 minutes, or until the “crust” is cooked.
  • Slide onto a plate and repeat with the remaining 4 egg whites (or 1/2 cup liquid egg whites).
  • Transfer each “crust” to the prepared baking sheet and sprinkle each with 1 tablespoon of grated Parmesan cheese, 1/4 teaspoon of Italian seasoning, and a pinch of salt. Spread the mixture out to cover each crust.
  • Adjust your oven rack to the top position and broil the "crusts" until golden brown and crunchy, about 7-10 minutes. They burn easily so watch them closely!
  • Take the crusts out of the oven and top with pizza sauce, toppings, and cheese.
  • Broil for an additional 2-3 minutes, until the cheese is melted and golden.
  • Serve immediately and DEVOUR.
