It’s finally feeling like FALL!
Which means you’re surrounded by a sea of cozy sweaters and wading in pools of pumpkin spice. You might even be eating gluten free apple crisp for breakfast. If so, I would congratulate you on your VERY wise life decisions.
It also means its time to BUST out that slow cooker and make some healthy crockpot meals! There’s something about coming home to the smell of a cozy chili bubbling away this is just MAGIC in the fall.
It doesn’t hurt that these gluten free crock pot meals are also IDIOTPROOF because the slow cooker just makes dinner time SO much easier.
What is the difference between a crock pot and a slow cooker?
I have always wondered this, so I did some research! “Crock-pot” is the name of a BRAND! It’s typically a stoneware pot surrounded by the heating element. A slow cooker is NOT a brand, it’s just the name of a type of cooking device. It’s a metal pot that sits on top of a heated surface.
Both can be interchangeable! It’s just important to note cooking times when looking at different gluten free crock pot recipes, as well as sizes of the cooking vessel used, as this can alter the cooking time in YOUR specific crock pot/slow cooker! How does a crock pot work?
Both slow cookers and crock-pots use moist heat to cook your dinner for a long period of time. They are WONDERFUL for developing flavor due to this long cooking time which is why you will love all these gluten free crockpot meals!
Slow cookers/crock pots also make VERY tender meats, due to that long cooking time, which you’ll find in many of these gluten free slow cooker recipes. Even the toughest meats can turn MAGICALLY moist and tender if you give ‘em a little slow cook!
How to Cook Chicken Thighs in the Slow Cooker
Mr. FFF LOVES slow cooked chicken thighs. However, he does NOT like chicken breast in the slow cooker – he thinks it’s nasty and dry. So, when I’m in a pinch I like to make a big batch of chicken thighs to send to school with him.
I’ve been making slow cooker chicken thighs without a recipe after I discovered how to do it on Epicurious!
You can use whatever sauce you like! Use salsa for Mexican night, or even get a little crazy and throw some curry sauce in there! Chicken thigh options are ENDLESS!
- 2 Lbs Boneless Skinless Chicken Thighs
- Sea salt
- 2 Cups Sauce, Of choice
- Season your chicken thighs well with salt and pepper and place into the bottom of your slow cooker.
- Pour the sauce over. Cover and cook until the chicken is tender, about 7 to 8 hours.
- Stir until the chicken is broken up and nice and saucy.
- DEVOUR as needed!
