I just don’t understand overnight oats.

I mean, how are they so good? All you have to do is take plain old oats, add a wee bit of sweetener and a few generous splashes of almond milk, and let it sit overnight. And it somehow turns into something crave-worthy? Must be witchcraft.

This snickerdoodle overnight oats recipe benefits from a vegan, almond butter-based cookie dough that tastes like—you guessed it—snickerdoodles. We smush it into the bottom of a bowl, top it with an oat mixture, let it sit, and then mix it up. Yes, that’s right. You can eat cookies for breakfast. And, as expected, that concept is a hit among my kids.

Are Snickerdoodle Vegan Overnight Oats Healthy?

This six-ingredient recipe is vegan, gluten-free, and uses healthy swaps for a better-for-you breakfast. I use coconut sugar, which has a lower glycemic index (GI) than white sugar. If you like things sweet but want to avoid piles of sugar, the cinnamon in this recipe is a perfect natural sweetener. Unsweetened almond milk has less sugar than the sweetened version. Lastly, the protein from oats and almond butter will keep you full till lunch!

The History Of The Snickerdoodle

Dutch-German immigrants brought these cinnamon sugar cookies to the U.S., and they were popular with the Amish and Mennonites. The popularity of the cookie skyrocketed in 1891 when NYC baking specialist Cornelia “Nellie” Campbell Bedford shared her recipe in a local paper. So where did the name come from? There are at least two theories. According to The Joy of Cooking, the moniker comes from the German Schneckennudel, which literally means “snail noodles” and refers to a cinnamon roll. Other sources say that the name is just meant to be whimsical and fun and has no deeper meaning.

Sometimes I enjoy my snickerdoodle vegan overnight oats with a Hard-Boiled Egg or Fruit Salad. The sweet cinnamon also pairs well with bacon: try cooking it in the oven or whipping up Bacon Egg Cups!

Ingredients

  • 2 tablespoons creamy almond butter
  • 1 1/2 tablespoons coconut sugar
  • 1 teaspoon cinnamon divided
  • 1 cup old-fashioned oatmeal gluten free if needed
  • 1 cup unsweetened vanilla almond milk
  • 2 teaspoons maple syrup

Instructions

  • In a medium bowl using an electric hand mixer, beat together the almond butter, coconut sugar, and 1/2 teaspoon of the cinnamon until well combined. The dough should resemble cookie dough. Divide the dough between 2 bowls and press it into the bottom.
  • In a large bowl, stir together the remaining 1/2 teaspoon of cinnamon and the oatmeal. Pour in the almond milk and maple syrup and mix well.

  • Divide the oat mixture between the 2 bowls and refrigerate overnight.
  • In the morning, mix the dough at the bottom of the bowl around into the oats.
