This tender, moist and FLUFFY cake in a mug with its swirls of rich and DECADENT chocolate and roasty-toasty almond butter was inspired by last years easy banana bread in a mug cake and lemon vegan coconut flour mug cake.
Except GONE chocolate because when is chocolate-i-fying something not a VRY VRY solid life decision, you know?
Fun thing to note: I also tried this coconut flour chocolate paleo mug cake with TAHINI instead of almond butter and it was <3 <3. A totally unique, complex and nutty flavor that balanced out all the notes of chocolate in a FOOD BLISS kinda way. Sorta like in the chocolate paleo muffins with maple and tahini.
But, Mr. FFF (my second taste tester in command. I’m the first) said that he MUCH preferred almond butter and it kinda gave an “almond joy” vibe.

Taylor, thank you very much for your always enjoyable and informative emails and recipes on your website.
Our modern world can and does have many pitfalls, one of them as I’m finding out now is a microwave oven. Being a bachelor I’ve relied on microwaves for some time. Now I’m finding that as described on various internet websites that microwaving food somehow changes the food such that it affects the heart, makes the heartbeat slow and eratic. This is now what I have and there is no way to fix it!
My heartbeat used to be normal now its slow and eratic to the extent that electronic pulse measureing devices can’t measure my pulse, instead of about 60 beats per minute, its now down to about 30, the electronic devices only go down to 35.
A word to the wise ….. in the hope that this info will benefit you and some of your followers.

I just made these exactly according to the recipe and they did not rise at all. It seems like putting the baking powder directly in the apple cider vinegar rather than the dry ingredients caused it to react too early and negated any leavening effect it would have had. 🙁

These don’t rise a lot since there are no eggs! However, it should rise a little. Is your baking powder still good?

I made the regular version. It was good but next time I will mix the dry ingredients first because it had a slight baking powder taste. Thanks for the easy recipe!

I am supposed to stay away from vinegar and fermented foods. Do you think this recipe would work if I left out the ACV?

It won’t rise as much and I think it would be quite dense!
