The thing that is ultra-magical about baking brownies in a skillet is the fact that they don’t require impatient-person-you (and me!) to wait for brownies to set. WHO HAS TIME TO WAIT WHILE THE SCENT OF SWEET CHOCOLATE FILLS THE AIR?

Which, makes me wonder about you. Just bein’ honest.
It A-L-S-O means you can eliminate the need for cutting brownies –> serving on a plate. This requires 2 extra dishes: 1 knife and 1 plate. This means that Rockstar-just-made-brownies-you would have to clean MORE dishes and it’s my secretly life mission to eliminate that WHENEVER I CAN.
That’s why we’ve been eating skillet hazelnut paleo brownies and skillet peppermint vegan brownies left right and center. NO DISHES? NO PROBLEM.
Continuing on the “minimal dishes” train, I made these brownies for you in only O-N-E bowl. Dump it all in, mix it all up, spread it into the most adorable mini cast-iron pan EVER and then wait for THE BAKE.
In all the excitement, you might even sit in front of the oven and WATCH IT.
Who needs Netflix when you could just BAKE?
That could just be me though.
Other key points that I know you’re going to looooove: this skillet of bliss and chocolate and general deliciousness tastes like an ALMOND JOY. You pretty much tripped over your taste buds for last year’s salted almond joy no bake bars and healthy almond joy cheesecake soooooo……I made it for you in brownie form.
Of course, if you’re watching your carbs, you can get the same flavors in this low carb brownie with almond butter from Wholesome Yum!
The VRY VRY necessary “almond” part of an “almond joy” comes from Amoretti’s Almond flour! I introduced you to ALL their fab nut flours (pistachio flour – HELLO) in last years pecan pie paleo cookies, chocolate hazelnut healthy ginger snaps and Pistachio Whipped Shortbread Cookies with Chocolate, and now the almond flour is coming out to play, and joining our little nut flour par-TAY.
Combine that with a THICK (emphasis on thick) drizzle of creamy, smoooooth almond butter that is dancing on top of this ultra-rich, baked-in-a-skillet-brownie, and you have got a TAG team of almond flavored YUM.
Paired with the obvious chocolate (because it’s a BROWNIE) and underlying flavor profiles of coconut oil and a toasty coconut sprinkle on top?
Chocolate? CHECK. Almond? TIMES 2 BABY. Coconut? Gangs ALL HERE.
You just need to get yo’ gang together to spend a little face-time with some ooey-gooey chocolate BLISS.
Just FYI: by “gang” I don’t mean real-life-friends.
We’re purely talking about the gang of taste buds that live inside your brownie-loving-mouth.
I would NEVER ask you to share a little piece of food Heaven.

Ingredients
- 3 Tbsp Unsweetened coconut flakes
- 1/2 Cup Coconut sugar
- 1 Tbsp Coconut oil, melted
- 1 Large egg
- 1/2 tsp Amoretti Madagascar Bourbon Vanilla Extract
- 1 Cup Amoretti Almond Flour, (3.5 oz)*
- 3 Tbsp Cocoa powder
- 1/4 tsp Baking powder
- 1/4 tsp Baking soda
- 1/4 tsp Sea salt
- 3 Tbsp Dark chocolate, finely chopped (1 oz)
- 1 1/2 Tbsp Almond butter
Instructions
- Preheat your oven to 350 degrees and place the coconut flakes on a small baking sheet. Place into the oven until lightly golden brown, about 3-6 minutes. Watch closely, because they burn FAST.
- In a large bowl, beat together the coconut sugar and oil until the sugar is moistened. Add in the egg and vanilla and beat until well mixed.
- Add in the almond flour, cocoa, baking powder, baking soda and salt and stir until well mixed, and a thick batter forms. Finally, stir in the dark chocolate and 2 Tbsp of the coconut flakes. Spread the batter into a greased 6 inch cast-iron skillet.
- Melt the almond butter for a few seconds, until nice and running. Drizzle it over the top of the brownie and use a sharp knife to swirl around. Sprinkle the remaining coconut flakes over top.
- Bake until the edges are set and a toothpick inserted in the center comes out clean, about 20-22 minutes.
- Let stand for 5 minutes and then DEVOUR right out of the skillet!
