I teased that this molasses‑kicked drink was coming after that mint chocolate green smoothie, and here we are—the day has arrived. This gingersnap cookie steamer is so easy it practically makes itself, and the smell of ginger, cinnamon, and cloves is about to send you skipping down memory lane in the best possible way.

No, this isn’t just a warmed‑up glass of milk. It tastes like freshly baked gingersnaps, like the spirit of Christmas morning in a cup. Coconut milk gets swirled with coconut sugar, molasses, cinnamon, cloves, and ginger for a perfect harmony of warming flavors. This has become my cold-weather go-to when I’m craving something comforting and hot to drink, but I’m not quite feeling a coffee. Instead, this is a spicy‑sweet hug in drink form. The coconut whipped cream on top is completely optional, though it adds so much to the nostalgic holiday vibes that I can’t imagine having the drink without it.

Ingredients

  • 2 cups light coconut milk
  • 2 tablespoons coconut sugar or brown sugar
  • 1 tablespoon molasses
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • Coconut whipped cream optional

Instructions

  • Combine all the ingredients in a saucepan over medium-low heat until warm and steamy. If you have a frothing wand, you can use that too.
  • Divide between 2 cups. Top with coconut whipped cream and enjoy.

Tips & Notes:

If you have a blender with a soup setting, you can use that too!
