A deeply savory side dish that’s as delicious as it is easy to make!

It’s funny how certain foods that you hated as a child can turn into some of your favorite dishes as an adult. In my case, I used to recoil at the mere sight of cauliflower on my plate when I was a kid. It always seemed so bland and unappealing. Fast-forward to many years later, when I was served roasted cauliflower at a dinner party. I ended up loving it so much that I asked for the recipe and began making it virtually every week as a side dish for dinner.

Roasting the cauliflower turned out to be the key factor in changing my mind about the vegetable. The high heat of the oven works its magic by caramelizing the cauliflower, giving it an entirely different flavor. It’s this breakdown of sugars that makes it nuttier, richer, and sweeter. Plus, roasting the cauliflower gives it a wonderfully crispy texture. This recipe amplifies the deliciousness even more with the addition of curry powder, giving the cauliflower a spicy, savory kick that’ll have you coming back for seconds (and probably thirds). 

I love that this dish comes together in just 30 minutes, and it makes the perfect side for lunch or dinner. It pairs effortlessly with lots of different proteins, and also makes a great addition to salads!

Is Roasted Curried Cauliflower Healthy?

Load up your plate because cauliflower is a great source of fiber, vitamins, and nutrients! The spices used in curry powder, such as turmeric and ginger, are also known to have antioxidants. Additionally, this dish contains no gluten or dairy, and it’s vegan, Paleo, and keto-friendly. While this dish does contain fat from the olive oil, it’s a healthier fat compared to the saturated fat in butter or other oils like vegetable or canola oil.

What Is Curry Powder?

Curry powder is a British invention that combines a number of different spices found in Indian cuisine into a generic spice blend labeled as “curry.” However, most Indian cooks don’t actually use curry powder, as they traditionally blend their own nuanced mix of spices for every dish. The flavor and color of curry powders can vary widely, depending on the manufacturer. Most contain a blend of ground turmeric, cumin, and coriander, while some also include other spices like ginger, garlic, cardamom, cloves, or fenugreek. You can find curry powder in the spice aisle of most grocery stores, usually either in a jar or a bag.

How Do I Store Leftovers?

Allow any leftovers to cool completely, and then transfer them to an airtight container and store it in the fridge for up to 4 days. You can also freeze your leftovers in a freezer bag or airtight container for up to 3 months. No need to thaw before reheating. You can reheat from frozen either in the oven or microwave or on the stovetop.

Serving Suggestions

This dish is a delicious flavor bomb all on its own, but it also makes a killer side for a wide range of items like Juicy Grilled Chicken Breast, Cheeseburger Sliders, and Avocado Grilled Cheese. If you’d like to enjoy it with other Indian-style dishes, consider trying it with Indian-Spiced Chicken With Cashew-Cilantro Pesto, Vegetable Biryani, and Cumin-Roasted Carrots. I also love to add it to salads to make them more filling, such as this Vegan Salad or this Kale Salad.

Roasted Curried Cauliflower

Ingredients

  • 1 head cauliflower cut into florets
  • 1 small red onion sliced
  • 2 cloves garlic sliced
  • 3 tablespoons olive oil
  • 2 tablespoons curry powder
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 400℉, and line a baking tray with parchment paper.
  • Add the cauliflower florets, sliced red onion, sliced garlic, olive oil, curry powder, lemon juice, and salt into a bowl, and toss everything together until evenly coated.
  • Spread the cauliflower mixture evenly onto the lined baking sheet. Bake for 20 minutes, or until the cauliflower is browned and crispy on the edges.
