Moving on.

I came to a sad realization this past weekend: I am an 83 year old woman living inside a 23 year olds body.

I was invited to a bachelorette party on Saturday night, and I thought it sounded pretty fun! Mr. FFF and I are total party animals, and usually spend our weekends watching The Food Network, (note the sarcasm in “party animals”) so I thought it might be neat-o to go out with some girls.

Until I read the starting time of the party: 8 PM!

The dinner (which was the first event out of 3 EVENTS) started at 8. SO LATE.

So, I didn’t go. Because I fall asleep by 10, so starting the evening at 8 is just too late for this grandma.  Are you judging me?

If not, you probably should be. I’m judging myself.

So, I spent my weekend in the usual way: Making food, and watching people make more food, on TV. Please tell me that I am not alone in being the most boring human alive?

And, now that I have confessed my true, not-so-cool cat of a self, and you all are thinking about never coming back, I am going to win your love back with these chicken kebabs.

For starters, they’re red. That is THE color of love (according to valentines day) so, there’s that.

Second, there’s the fact that my baby sister (side note: I don’t have one of those) could make this recipe, since it’s SO EASY. Except for the skewering of the meat part. That be dangerous ya’ll.

And, finally, there’s the SURPRISE factor.  What is the surprise factor you ask?

Well, the star of this winner winner chicken dinner (had to) is Hunt’s Tomato Paste, which I bet you expected to only ever see in spaghetti and meat balls, am I right?

And now you think I’m even lamer because you’ve used tomato paste in non-spaghetti and meatball recipes, and my plan to earn your love back is foiled. Life is hard.

Ok, about the chicken.  Mr. FFF is obsessed with it. And, so am I.  It’s got a little bit of a Middle Eastern vibe, and a little bit of spice, which is PERFECT with that cool, mint yogurt dip.

In fact, it’s so cool that it brings back my “cool factor” since I, you know, made it.

Easy cooking: Grilled Spicy Tomato Chicken Kebab Recipe with Yogurt Mint Sauce

Ingredients
  • 2 Tbsp Hunts Tomato Paste
  • ¼ tsp Salt
  • Pinch of pepper
  • ½ tsp Smoked paprika
  • ¼ tsp Cumin powder
  • ½ tsp Garlic, minced
  • ⅛ tsp Cinnamon
  • ¼ tsp Olive oil
  • ½ lb Boneless, Skinless Chicken breast, cut into bite sized pieces
  • 1 Medium yellow onion, cut into chunks.
  • For the mint yogurt sauce:
  • ½ Cup Non-fat, Plain Greek yogurt
  • ¼ Cup Cucumber, grated
  • ¼ tsp Salt
  • ½ tsp Garlic, minced
  • Pinch of pepper
  • 2 Tbsp Fresh mint, roughly chopped, plus additional mint for garnish (optional)
Instructions
  1. In a large bowl combine the tomato paste, salt, pepper, smoked paprika, cumin powder, garlic, cinnamon and olive oil. Mix well.
  2. Add in the cut up chicken and stir to coat. The mixture is very thick, and I found it much easier to use my hands to really rub the tomato paste mixture all over the chicken. Cover and refrigerate for at least 4 hours - overnight (the longer the better!)
  3. To grill:
  4. Preheat your grill to medium heat and lightly spray with cooking spray.
  5. Using sharp skewer sticks, alternate between pieces of chicken and onion, piercing each piece and sliding it to the end, building a "stack" of skewered ingredients as you go.
  6. Place the skewers on the grill and cook until no longer pink inside, rotating every so often to ensure even cooking. This takes about 10-15 minutes.
  7. While the chicken cooks, it's time to make the sauce.
  8. Place the grated cucumber into a kitchen towel and ring out the excess water.
  9. Add the cucumber, and all the other sauce ingredients, into a medium food processor and blend until smooth, well mixed, and the mint gets broken down.
  10. Garnish the skewers with fresh mint and serve with yogurt sauce.
  11. DEVOUR.

    Taylor, I’m pretty old on the inside too. Standard bedtime around here is 10, 11 if I’m having a wild night. I’m kind of lame, but I need lots of sleep or everyone is sorry! These kabobs look awesome. Love tomato paste to tenderize chicken for the kabobs. Yum!

    The second I read that the bachelorette party started at 8, I was all, “daaaaaaaaaaaaaamn, that’s LATE!” I’d be hardpressed to make it past 10:00 too, because this girl had an 89-year-old trapped in her body. We can be old fuddy duddies together.

    I’m right there with you! Whenever someone makes plans and says the dinner starts at 7 I start to stress. Heck, I even stress when school events start that late!!! I start counting backwards to how much sleep I’ll lose. :) Um, can I come over for dinner and have these? I’ll come at 5pm, like senior citizen… :)

    I LOVE chicken kebabs especially this time of year! The mix of seasonings you used sounds amazing together and that mint sauce is the purrrfect side-kick! Oh, and you are definitely not alone in being the so-called boring-est person in the world. — Pretty much the only shows I watch are cooking shows and my life pretty much just revolves around cooking.     I’m back, too! (We just got a puppy, so I’ve been a little, preoccupied, shall we say!) So sorry I’ve been MIA! Gonna have to dig through all these yummy recipes of yours – I’ve missed so many!

    We LOVE chicken recipes and are always searching for new ways to grill. Kabobs are always fun for the kiddos, and these flavors are amazing! I’m starving for these … and I just finished dinner a bit ago. So yeah … these are going to be on my menu so soon! :)

    8pm dinner is too late?! Oh Taylor… you are totally trapped in an 83 year old’s body! Hahaha last night I took my parents out for dinner at 7:30 and they are 60 lol. Too funny!

    Ooo I’ve just fallen in love with chicken with yogurt dipping sauces lately. I love these grilled kabobs with the mint sauce! And oh gosh, I’m the same way with late events. 24 years old, and I avoid late social meetings because I’d rather make dinner, watch Netflix, and be in bed by 10pm. If I stay up late talking to you on the phone til 10:30pm, you’re a lucky, lucky friend. Oh, it’s so sad :)

    I have these on my meal plan for this week. I just was reading over the recipe, checking the ingredients to make my grocery list, and I am SO looking forward to making (and eating) these! We really love kebobs in this house – probably have them 3 or 4 times a week in the summer – so I go through lots recipes, and this is one of the most unique ones I have seen in a while! I’m really looking forward to trying it :)

        I made these for dinner on Tuesday and it was delicious! We have a pretty high spice tolerance, so the chicken didn’t taste too spicy to us, but it was still SO flavorful. I loved the yogurt sauce, too! The combination was perfect!!! Thanks for sharing the recipe :)

    Somehow I stumbled on your blog and I’m so glad I did. I made these today and they were yum! I had everything on hand except for the mint (and I added mushrooms just because I needed to use them up). Although tasty, I didn’t find this spicy at all. Was the smoked paprika supposed to give the chicken extra heat?

      It isn’t supposed to be overly spicy, but everyone’s taste buds are different you know? The smoked paprika is more for the flavour then the heat! The mint truly makes the dipping sauce though! I am glad that you enjoyed them! So great to have you here! :D
