Since becoming a parent, I’ve grilled more burgers than I can count. Predictably, my three kiddos love burgers, especially my youngest. If I made burgers every day, she’d be the happiest little omnivore.

To stave off culinary boredom, I like to stretch the definition of “burger.” I’ve done my share of turkey, bison, and veggie varieties, really anything in patty form. But a Caesar grilled chicken “burger”? That’s more than a semantic stretch—it’s not a burger. Well, tell that to my daughter, because to her, it is! It’s meat. It’s on a bun. And it’s delish. That’s a burger in her book.

Also, it’s nice to take a break from feeling like a patty-shaping machine at some industrial food factory. All I have to do is season and grill. Talk about a win-win. In terms of flavor, there are no surprises. I count that as a good thing. When it comes to a recipe like this, I’m aiming for a predictable crowd-pleaser. This burger is like Caesar salad on a bun. For the chicken, I stick with a no-frills seasoning of salt and pepper (feel free to add Italian herbs and garlic powder). The real star here is the Caesar dressing, and even here I don’t overdo myself. By all means, make your Caesar Dressing Recipe. Me? I’ll just squirt some good store-bought dressing on a bun and call it a day.

We also can’t forget about the cheese, provolone to be exact. I think the nutty sharpness of the cheese really complements the Caesar, though you can also try mozzarella cheese. Top with a fresh romaine leaf and sliced red onion, and you’ve got yourself one tasty “burger.”

The toasted bun

I’m not what you’d call a low-carb guy. Sure, I’ll make the odd low-carb meal now and again. Still, if I’m making a burger, I want my meat nestled between a bun, not a salad wrap. So, yes. This recipe calls for buns. However, I have been upping my fiber intake, and let’s face it—the typical burger bun isn’t exactly winning any whole-grain points. Our family has switched to using heartier burger buns packed with fiber. The only catch? Personally, I think they taste better toasted.

Letting your whole-wheat buns sit (face down) for a minute on the grill makes all the difference. After you’ve finished grilling the chicken, the grill should be cooling down. That’s the best window, because your buns will crisp up a little without turning to charcoal. Of course, with a gas grill, all you need to do is dial the flame to a medium-low. But we all know that charcoal is superior, right? Just kidding. Sort of.

How do I store leftovers?

Store the chicken separately from the bun and other toppings. You can refrigerate the leftovers in an airtight container for up to 4 days. While you can microwave the chicken, it tends to dry out. I like to add the chicken and a tablespoon of water (or chicken broth for more flavor) to a preheated pan set to medium-low. Cook covered for 2 minutes or until heated through.

Serving suggestions

If you’re grilling burgers, it’s practically a requirement to serve some fries with them! Add some greens as well, the most obvious being a Caesar Salad—make a little extra for your chicken burger.

Caesar Grilled Chicken Burger

Ingredients

  • 2 small chicken breasts about 1/4 pound each
  • 1 ounce fresh provolone cheese sliced
  • 2 whole-wheat hamburger buns or gluten-free, if needed
  • 4 tablespoons Caesar dressing gluten-free, if needed
  • Leaves romaine lettuce
  • Red onion sliced optional

Instructions

  • Preheat your grill to medium-high heat.
  • Once the grill is hot, place the chicken breast on it and cook until no longer pink inside, about 5-6 minutes per side. Once you flip it, place 1/2 ounce of cheese on each breast in the final few minutes of cooking, so that it gets nice and melty.
  • During the last few minutes of cooking, also place the buns cut-side down on the grill so they get a little toasty and crunchy.
  • Spread the dressing on each half of the hamburger buns and top the bottom half with lettuce leaves and red onion (if using).
  • Place the chicken on top and enjoy!
