Pumpkin Spice AND protein in ONE RECIPE? This makes me very very excited and I know it’s going to make you very excited too.
Theses are different then the paleo protein bars that I shared a while back in the sense of 1. flavor (duh) but also TEXTURE.
They’re not as densly chewy but more muffin-like chewy? Kind of like gluten free pumpkin muffins meets protein bar. It’s hard to describe but I know you are going to like it anyway.
Pinky swear.
It makes them feel perfect for breakfast but also perfect for snack because you and I both know that we want to pumpkin spice ALL THE THINGS. Nothing is safe. Even made pumpkin flavored homemade microwave popcorn once. But, I digress.
Why these Protein Bars are the Best
A protein bar really has it all. What I’m looking for in a protein bar is nutrients to keep my body healthy, the protein to keep my body strong and full of energy, and, of course, the FLAVOR! What kind of protein powder works best?
This pumpkin protein bars recipe is super versatile because you don’t have to use a specific type of protein powder! I’ve used both whey protein powder as well as plant based and they both work great in this recipe and result in delicious taste and texture!
Pumpkin Protein Bars Ingredients
I love a recipe with good, clean ingredients, that actually tastes GOOD! Anyone with me on this? This tasty pumpkin protein recipe definitely meets the mark, and here’s what you’ll need to make these tasty bars:
- Pumpkin Puree (not pumpkin pie filling)
- Egg Whites
- Maple Syrup
- Pure Vanilla Extract
- Vanilla Protein Powder
- Truvia
- Pumpkin Pie Spice
- Quick Oats
- Pecans

How to make Pumpkin Protein Bars
Nothing’s better, in my opinion, than something that’s so delicious but also isn’t too fussy to make! That’s another reason why these bars are my JAM. They only take a few simple steps to make a reality and they’re going to be your new GO TO snack! Here’s how to make them:
Prepare
Set your oven to 350 degrees Fahrenheit and let it heat up. Line the pan with some parchment paper, spray it with a bit of oil and set aside.
Stir
In a large bowl, stir together the pumpkin, egg whites, maple syrup, and vanilla extract. In a medium bowl, stir together the truvia, protein powder, and pumpkin pie spice. Add in the quick oats and add the wet ingredients to the dry. Mix it all together until well combined.
Bake
Using a rubber spatula, spread the batter into the prepared pan. Sprinkle with pecans and drizzle with syrup. Pop it in the oven and bake until the middle feels set.
DEVOUR
Cool completely, then slice and serve! Enjoy!
What’s the best way to store Pumpkin Protein Bars
Bake up a batch or two and enjoy these tasty bars later! I recommend storing them in an airtight container in your fridge. They will last about a week this way. If you still have some left after a week (I doubt you will because they’re THE BOMB but anyhow…), simply pop the airtight container in the freezer and keep them in there for up to a month! Delicious, simple, nutritious bars ready to enjoy when you want them!

Sorry, another egg question… Did you try it with whole eggs? I have farm fresh eggs and I hate not putting in those fresh, nutritious yolks. But if it destroys the bars I dont want to do it.

I can’t say that I have tried it with whole eggs, I am sorry! I generally use liquid egg whites for recipes such as this, so I don’t have to get rid of the yolks 🙂

These look so amazing! I’m excited to try them! How well do they freeze? I’m planning on making multiple types of protein bars and chucking a majority of them in the freezer. I’m just curious on how well they freeze and for how long?

Honestly, I haven’t tried freezing them as they never lasted long, so I can’t be of too much help. Personally, I think they might get a little weird, being made up of a lot of eggs. Sorry that doesn’t help much! Please let me know if you try it!

Would it be possible to skip the truvia? Or do you think this wouldn’t be the same without it? I am working on getting rid of most sweetners in my food that dosnt naturally occur.. This sounds super yummie though!

Unfortunately, I really don’t think they will taste good at all without any sweetener. You COULD try subbing a natural granulated sugar like coconut sugar? But, I have not tested the recipe as such so I can’t really speak for how it will turn out or taste – I am so sorry! If you try something, please let me know! Thanks!

Just made these with my daughter…we added about a quarter cup 9f chopped dark chocolate! So we will let you know how that works and tastes…i almost forgot the truvia because i didnt read it in the recipe steps…did i overlook it or is it missing from the steps?
