A Pineapple Smoothie with Coconut Cream is a simple snack with a little taste of the Summer. It’s perfect when you are craving something sweet but want to be healthy!

I don’t know exactly what that means but I am translating it to a little something like this:
Oh-my-gosh-why-did-I-take-two-weeks-off-work-I-didn’t-realize-that-would-mean-that-I-would-come-back-to-a-brain-exploding-amount-of-things-to-catch-up-on.
That was my life yesterday after my nice little work break/trip to Canada.
My brain? It. Is. Fried.
Except fried doesn’t even describe it. More like my brain is burnt toast.
And not the yummy kind of toast that includes peanut butter or honey, or Nutella. Just straight up, crunchy, crispy, black, charred burnt toast.
Side note: When I was a little girl, my cousin’s cat had kittens, and she let me name one. It was black. I named it burnt toast.
She changed the name.
I was 6, okay. Don’t judge.
Secretly though, I’m still a little bitter. I mean, how creative is that name?
Anyways.
I’m not usually a huge smoothie person…but you guys are! You loved the Chocolate Protein Smoothie so much that I decided to make you another one!
I’m pretending that I just listened to you because I am all about making you guys happy, (which I am!) but I am secretly being selfish. My toast brain can’t even handle making my favorite oatmeal recipe with blueberry cheesecake swirl,right now so a fail-proof, easy smoothie is exactly what I need for breakfast.
Plus, pineapple is like the ultimate happy fruit. If I had to picture any fruit with a happy face, that is exactly what it would be. It also may be partially because the happy face emoticons are yellow and pineapples are yellow. But whatever. You understand.
Do I even have to tell you that pineapple and coconut go well together? I mean remember that frozen yogurt recipe with pineapple and coconut? HELLO. Side note: I don’t know how to get the squiggle over the “n” ever since I updated to Windows 8. Are you guys on Windows 8? It’s SO CONFUSING. I miss Windows -1. I could handle that.

I took a week off last week for vacation, and even though I got ahead on things before I left, I’m still trying to get caught up! On the bright side: 1. The vacation was totally, absolutely worth it and I would do it again in a heartbeat. 2. The smoothie looks delicious 🙂
