Honestly, even as a food blogger who makes all sorts of recipes, I struggled with making a basic sweet potato for the longest time. Are Crock-Pot Sweet Potatoes Healthy?

Sweet potatoes are packed with fiber and nutrients like beta-carotene and vitamin C, making them a fantastic choice for a healthy side dish or even a main meal. They’re naturally low in fat and can easily fit into a variety of diets. This recipe, without added sugar, oil, or processed ingredients, is suitable for diets like Whole30 and Paleo.

The beauty of Crock-Pot sweet potatoes is that they retain their nutrients well due to the slow cooking process. Unlike boiling, where some nutrients leach out into the water, slow cooking helps preserve everything that’s good for you inside that beautiful, orange skin.

Sweet potatoes are usually enjoyed as a side dish along with some protein or veggies, but you can also serve them for breakfast with Air-Fryer Fried Eggs and a spoonful or two of this zesty Salsa Ranchera. A great combination is to serve them with Crispy Breaded Air-Fryer Chicken or an Oven-Baked Bacon-Wrapped Chicken Breast With Avocado Salsa. Complete the meal with a side of Easy Sautéed Broccoli.

Ingredients

  • 4 large sweet potatoes

Instructions

  • Wash the sweet potatoes and scrub off any dirt from the skin. No need to dry them, as the moisture helps cook them. But make sure they're not dripping wet.
  • Use a fork to prick holes at least 1/4-inch deep all over the sweet potatoes.
  • Put your potatoes in the Crock-Pot, and put on the lid. Cook the potatoes until they’re perfectly tender, about 6-8 hours on low, or 3-4 hours on high, depending on the size of your potatoes as well as your Crock-Pot.
  • Your potatoes are done when you can pierce them easily with a fork.
