Zingy, creamy, and sunshine in a jar, this Cilantro-Lime Dressing brings vacation vibes straight to your kitchen.

Let’s be honest: we can’t all jet off to a tropical paradise every time we crave something exciting—but with this cilantro-lime dressing, your taste buds totally can. One whiff of the fresh cilantro, a spoonful of zesty lime, and a hint of jalapeño heat, and suddenly your Tuesday lunch feels like it’s happening poolside with a breeze in your hair. This bright, vibrant staycation food is ready to transport you to paradise, even if you’re sitting in your home office sporting your favorite slippers.

In just 10 minutes, this dressing whips up into a silky green dream that’s perfect for drizzling over salads, tacos, grilled veggies, or pretty much anything that needs a punch of personality. It’s what you make when your fridge is uninspiring, but your soul is begging for something bold. Think of it as a vacation in a jar—no passport required.

Is Cilantro-Lime Dressing Healthy?

Absolutely—this dressing is as nourishing as it is delicious. Packed with heart-healthy fats from olive oil and avocado, it also delivers a dose of fiber, potassium, and vitamin K. Fresh cilantro brings not only its signature flavor but also antioxidants, while lime juice adds vitamin C.

Unlike many store-bought dressings that are high in refined oils, sugar, and preservatives, this homemade version is clean and made entirely with whole-food ingredients. A small touch of honey balances out the acidity and spice, but the sugar content remains low. It’s also dairy-free, gluten-free, and vegan-friendly if you skip the honey or swap it for agave. Healthy never tasted so good!

Why Fresh Cilantro Makes All The Difference

Cilantro is one of those love-it-or-hate-it herbs, but when it’s fresh and used in the right way, it brings bright, citrusy depth that transforms a dish. In this vinaigrette, fresh cilantro acts as both herb and leafy green, blending with creamy avocado to give the dressing body and color. Dried cilantro just doesn’t deliver the same fresh, zippy kick that’s needed for your all-inclusive staycation.

The key is to use cilantro that’s vibrant green and free of wilting. You can include the tender stems too, as they are flavorful and blend easily. Paired with lime juice and a little jalapeño heat, fresh cilantro ties it all together and gives this dressing its signature flavor. Ahh, summer in a bottle!

How Do I Store Leftovers?

Pop this dressing in a mason jar or any airtight container and stash it in the fridge for up to 5 days of freshness. The avocado may cause it to thicken or deepen in color slightly, but a good shake or stir will bring it right back to life.

Serving Suggestions

Cilantro-lime dressing is the definition of a multitasker. Drizzle it over Ground Chicken Tacos or a Quick And Healthy Taco Salad, spoon it on grilled corn, or toss it with roasted sweet potatoes and black beans for a side dish that screams summer. It’s perfect on this Juicy Grilled Chicken Breast Recipe, Sautéed Shrimp, or a Chicken Burrito Bowl with a cold drink in hand. Use it as a sandwich spread, dip for quesadillas, or even stirred into rice or quinoa for an instant flavor upgrade.

Basically, if you’re eating it, this dressing probably belongs on it. It’s casual, like a beach day, but makes everything feel just a little more special.

Cilantro-Lime Dressing (Cilantro Vinaigrette)

Serves: 6
Prep: 10 minutes minutes
Total: 10 minutes minutes

Ingredients

  • 1 clove garlic
  • 1 jalapeño
  • 2 cups fresh cilantro
  • 1 avocado
  • 1/2 cup olive oil
  • 1 teaspoon honey
  • 3 tablespoons lime juice
  • Salt and pepper

Instructions

  • Roughly chop the garlic and jalapeño for easier blending.
  • Add all ingredients to a food processor or high-speed blender.
  • Blend until smooth and completely emulsified.
  • Taste and adjust seasoning to your liking.
  • Serve immediately or store in the fridge. Shake before each use.

Tips & Notes:

Quality of Ingredients: Opt for ripe avocados, fresh cilantro leaves, and high-quality olive oil to ensure maximum flavor and creaminess.
Blending: This is a dressing, not a dip, so you will want to keep blending until it is totally smooth and creamy.
Heat Level Control: If you want to minimize the heat, remove the seeds from the jalapeno before blending. If you like the burn, keep the seeds intact.
Taste Test: You can add the seasoning after you’re done blending. Do it in small amounts — it’s easier to add more salt, lime, or honey than to take it away.
