Whether it’s for a cleanse or just a refreshing drink, Celery Juice is made to please.

When I first heard about celery juice, I was skeptical. Isn’t it just green water? I thought. But then I read articles and watched YouTube interviews about people who drank nothing but celery juice for seven days straight, and I became curious to try it for myself. Not for seven days, mind you, but once in the morning, an hour before breakfast. Personally, I found it to be an uplifting way to start the day. It tasted earthy yet refreshing, with a burst of lemon juice that’s bright and tangy. For once, both my taste buds and belly were happy campers!

Even if you have your doubts about celery juice and its supposed attributes, it’s fun to try at least once. With a handy dandy juicer, I find you can whip up all kinds of yummy drinks, and this one is easy for newbie juice-makers. My friend once juiced a bunch of her garden-fresh celery, infused with lime juice and spearmint, and it was heavenly. There’s something about this green beverage that’s just too beautiful to pass up. Try and taste it for yourself. You might just discover what all the hype is about.

Is Celery Juice Healthy?

Yes. Celery juice is a healthy, fresh way to hydrate and cleanse the body. It’s full of vitamin K, potassium, and folate. This is why some people go as far as drinking nothing but celery juice for a few days straight. However, it’s important to consult your nutritionist or doctor first. Make sure to do your own research and talk to your trusted health practitioners before leaping into it. The easiest and safest way to start with celery juice is by drinking a glass every morning, one hour before breakfast.

What To Do With The Celery Fibers

When you clean out your juicer, it can feel wasteful to simply throw out all the leftover celery fibers. But don’t worry—there are a couple ways to put these scraps to good use, so that nothing goes to waste. My personal favorite way to recycle celery pulp is by pressing it flat onto a baking sheet with parchment, and then topping it with salt, pepper, and everything bagel seasoning. Next, cut it into pieces, and then pop it into a preheated oven at 175°F. Bake for 5-6 hours, and ta-da! You’ve got a tray of scrumptious celery chips. If you don’t want to eat the fibers, though, you can always compost them to give them back to the earth. The choice is yours!

How do I store leftovers?

Leftover celery juice can be stored in a closed pitcher or Mason jar. Refrigerate it for 1-2 days, and enjoy it as fresh as possible for the best quality drink. You can freeze it if necessary, too.

Serving Suggestions

A fun and colorful way to serve celery juice is with frozen fruit in the glass to both sweeten it and keep it cold. Try frozen pineapple, mango, berries, or kiwi. If you’d like celery juice to be part of a lean and green meal, pair a glass with Berry Salad, Spring Salad, or Vegan Salad. For a healthy dessert option, try Sugar-Free Frozen Yogurt, Watermelon Fruit Salad, or Fruit Kabobs.

Ingredients

  • 1 large bunch celery about 8-10 ribs
  • Optional: 1/2 lemon juiced

Instructions

  • Rinse the celery ribs under cool running water. Trim off the base and any discolored parts, then chop the stalks into 2-inch pieces.

  • Place the chopped celery in your juicer and process until all the juice is extracted. If you like, stir in the freshly squeezed lemon juice for extra brightness.
