These White Chocolate Covered Strawberries are a sweeter spin on a classic, easy treat. No one can resist strawberries plus white chocolate!

I had a period in my life when I was obsessed with white chocolate. Whenever I made hot chocolate, it was with white chocolate. If I treated myself to a small box of bonbons from my favorite chocolate shop, they were all white chocolate. No bar of white chocolate was safe in my house either. Even though I told myself I would only use it for baking, I always ended up devouring it. Needless to say, this addiction had to come to a halt. No, I wasn’t about to swear off white chocolate for the rest of my life (as if!), but I had to find a way to make eating it a little less girdle-busting.
Enter white chocolate covered strawberries! Combining fruit with chocolate has to be one of my FAVORITE ways to do dessert, so this magical combination was exactly what I needed in my life. The strawberries have that slight sweetness that is complemented by rich white chocolate to create the most simple yet beautiful and tasty dessert EVER! And yes, I make them as soon as I bring that bar of white chocolate into the house, so there is no temptation to eat it all by myself. Plus, I share with friends, which always makes them very happy!
Are White Chocolate-Covered Strawberries Healthy?
Well, strawberries (all berries, for that matter) are very good for you and should be eaten regularly. They’re a good source of fiber, vitamins, minerals, and antioxidants. White chocolate covered strawberries, however, are another story. Sure, the goodness of strawberries is still there, but the white chocolate is highly processed and high in fat and sugar. To make them slightly healthier, you could use a good quality dark chocolate (at least 72% cocoa solids), which would have less sugar and is even a source of antioxidants. Or, you could savor just one or two at a time (yes, I know, that’s asking a lot) and share the rest!
What is White Chocolate Anyway?
White chocolate is a sweet, creamy confection that consists of cocoa butter, sugar, and milk solids. It is often flavored with vanilla and contains lecithin, which acts as an emulsifier, helping to improve the chocolate’s texture and consistency. Although white chocolate shares some characteristics with traditional chocolate, it isn’t technically considered “real” chocolate because it doesn’t have the cocoa solids that give dark and milk chocolate their intense flavor and dark color.
Due to its high cocoa butter content, white chocolate has a rich, buttery texture and melts beautifully, making it ideal for sweet recipes. Its mild and creamy flavor pairs really well with tangy fruits such as berries.


How to Make Ahead And Store
Keep these white chocolate covered strawberries in the fridge for no more than 2 days. Freezing is not recommended. The fruit’s high water content means they will be a soggy mess once defrosted.

White chocolate covered strawberries are delicious as they are, but they can also be a lovely Valentine’s Day dessert. If you’re looking to celebrate love with a special meal, start with an elegant French 75 Cocktail. As an appetizer, you could serve a refreshing Ceviche. For the main, you can’t go wrong with a perfectly grilled Steak, Truffle Fries, and a green salad dressed in nothing more than a mustardy vinaigrette. A bottle of a bold cabernet sauvignon on the side, and you can bet that the sparks will be flying!


Ingredients
- 4 ounces white chocolate cut into pieces (or white chocolate chips)
- 1/2 tablespoon coconut oil
- 8 ounces hulled strawberries
Instructions
- In a small microwave-safe container, melt the chocolate with the coconut oil. Set the microwave to 50% power and cook in 20-second intervals, stirring between each interval, until smooth.

- Pick the strawberries up by the top and dip almost all the way into the chocolate, gently shaking off the excess. Place onto a parchment paper lined plate or baking sheet and repeat with all berries.

- Drizzle the remaining chocolate on top.

- Place in the fridge to harden for 5-10 minutes and serve.
