Drizzle this sweet elixir into your favorite drink or dessert for a little pick-me-up.

From cocktails and mocktails to your favorite sweet brunch dish, adding a splash of strawberry simple syrup does wonders. It’s naturally vibrant and sweet, brightening any drink or dish in more ways than one.

Can you believe it only takes three ingredients? Unlike many store-bought options, this syrup really is simple. All you need is water, sugar, and fresh strawberries. That being said, this fantastically fruity concoction has a whole lot of pizzazz. The magic is in the cooking process, which releases tangy juices from the strawberries and leaves you with a remarkable extract. What a great way to use ripe strawberries quickly, so they don’t go bad!

In my opinion, making this in big batches while strawberries are in season is a great idea because you get the best quality fruit with a flavor that lasts. Then, you can store your batches to enjoy throughout the year. Keep scrolling to see how to best store it, and enjoy!

Is Strawberry Simple Syrup Healthy?

As a combination of fruit, water, and sugar, this recipe might be simple, but it’s not the healthiest. This syrup is definitely a “sweet treat” that should only be used once in a while. On the bright side, unlike many store-bought options, this homemade version contains no artificial sweeteners or colorings. Yep, that’s an all-natural red right there!

Infuse Your Syrup With Herbs or Citrus

Did you know that you can add fresh herbs to your simple syrup just after it simmers? Letting these herbs sit in the syrup and infuse together creates a refreshing flavor that you can use in all kinds of elixirs. Specifically, I recommend adding fresh basil for a more earthy flavor, or spearmint for a brighter and slightly sweet taste. Alternatively, you could also add a bit of citrus to the mix to provide some zest.

How to make ahead and store

Make sure the strawberry simple syrup has cooled to room temperature before storing. Then you can transfer it into a mason jar or plastic container, cover, and refrigerate it for up to 2 weeks. For longer storage, freeze it in a freezer-safe container for up to a month and thaw it in the refrigerator before serving. I suggest portioning it out into an ice cube tray for easy access. Plop a couple of strawberry simple syrup ice cubes into your drink, and you’ll feel like the star of the party!

Serving Suggestions

Add a splash of strawberry simple syrup to a Strawberry Mojito, Strawberry Daiquiri, or Watermelon Sangria to liven up your cocktails. For a nonalcoholic option, try adding it to lemonade or to your favorite fizzy water.

If it’s a bountiful brunch you’re hosting, drizzle it over Strawberry Rhubarb French Toast Bake, Coconut Whipped Cream Brioche French Toast, Blueberry Protein Waffles, or Pancakes.

Strawberry Simple Syrup

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup fresh strawberries hulled and sliced

Instructions

  • In a medium saucepan, combine the water, granulated sugar, and sliced strawberries.
  • Bring the mixture to a boil over medium-high heat, then reduce to a simmer and let cook for 20 minutes, until the strawberries are soft and the syrup is richly colored.
  • Strain the mixture through a fine mesh sieve into a bowl, avoiding pressing the strawberries to keep the syrup clear. Discard the solids and let the syrup cool.
  • Transfer the cooled syrup to a clean bottle or jar and refrigerate. Use as needed.
