Skip the line at Starbucks and make these delicious egg bites at home. They’re a fantastic breakfast option for busy weekday mornings when everyone is rushing out the door!

Creamy bacon and cheese stuffed breakfast potatoes on a white ceramic plate. Perfect for healthy breakfast recipes and brunch ideas. Savory potato bites with crispy bacon bits.

One of the most notable attributes of this recipe is how easy it is to make. Whether you’re making these for a high-protein breakfast option or you just want to switch things up in your kids’ school lunches, these little bites of goodness are perfect for grabbing on the go.

Back in my college days, I would prepare these handy egg bites all the time. One of the main reasons I made them so often was that I didn’t want to spend loads of money at Starbucks on campus every morning, with the added bonus of not having to wait in line, which made sure I wasn’t late for class! Pro tip: individually wrap each bite in parchment paper for easy access when you’re running out the door.

These egg bites feel like a fluffy, airy, protein-filled cloud—every bite is just divine. The ooey-gooey, melted Gruyère cheese and the delicious, crispy, crunchy bacon give this recipe so much texture, making the few short steps entirely worth your while. To really dial these bites up, carry a little bottle of hot sauce in your backpack—just like I used to!

Are Starbucks Egg Bites Healthy?

Looking for high-protein breakfast options can feel like looking for a needle in a haystack. Thankfully, these Starbucks egg bites are packed with eggs and cottage cheese, providing a great amount of protein, so you can feel energized throughout the morning. If you want to keep the fat and calorie count down to a minimum, you can easily swap out the bacon for turkey bacon. You can even make this vegetarian by replacing the bacon with some of your favorite vegetables like broccoli, onion, or bell peppers. This recipe is an excellent breakfast option for anyone who is gluten-free. You can also make this recipe keto-friendly if you opt out of using the cornstarch.

Why You Will Love This Recipe

Not only are these egg bites a fantastic grab-and-go breakfast option, but they’re also incredibly delicious! The crispy, crunchy bacon paired with the rich creaminess of cottage cheese and melted Gruyère cheese truly creates a match made in heaven. Forget about waiting in line at Starbucks for average egg bites when you can slip on your chef coat and whip up even tastier ones in your own kitchen!

Another reason you’re going to love this recipe is how easily you can customize these egg bites to suit your taste! If you’re in the mood for a little spicy kick in the morning, feel free to add a splash of hot sauce or some of this Jalapeño Salsa into the egg mixture. Want a boost of probiotics and to add funky fermented flavor to your egg bites? Just serve with some kimchi on the side!

How do I store leftovers?

Once the egg bites are cooled, you can store any leftovers in an airtight container in the refrigerator for up to 3-4 days. When reheating, you can either microwave them for around 30-60 seconds or broil them in the oven for 1-2 minutes until fully warmed through. For longer storage, you can freeze them for up to 2 months.

Serving Suggestions

While these egg bites are absolutely divine by themselves, there are loads of side dishes you can serve them with, so you get a nutritious breakfast. If you’re searching for a carb to add on the side, try these Easy Sweet Potato Hash Browns or this Air-Fryer Breakfast Potato recipe. To introduce a delightful combination of sweet and salty, try pairing with this Blueberry Oatmeal With Cheesecake Swirl or these Delicious Cottage Cheese Pancakes.
