Make potato chips part of a super crunchy meal by coating your chicken with them!

It’s not easy to make potato chips part of a healthy meal, but you can if you get a little creative with how you use them. That’s what I love about this recipe for potato chip chicken; the dish is exactly what it sounds like! All you have to do is coat the chicken with potato chips and spices the same way you would with bread crumbs, and the result is downright delicious.

Why would you ever think to coat chicken with chips? For starters, the chips provide a great crunch to the exterior of the chicken, and if you use the right chips, they won’t lose their classic texture just because they spent time in the oven. You also get a little bit of the salty flavor of the chips with every bite, contrasting against the juicy and tender interior of the chicken.

I love to whip up a homemade dipping sauce while my chicken cooks in the oven. If you’re a fan of BBQ sauce, I can recommend this Keto BBQ Sauce that’s also sugar-free. If you want to go another direction, this Honey Mustard Dipping Sauce only takes about five minutes to make.

Is Potato Chip Chicken Healthy?

There are two sides to this potato chip chicken from a health perspective. Most potato chips tend to be high in fat and sodium, and if this is a concern for you, try to look for chips that are low in fat and sodium. You could even make your own Air-Fryer Potato Chips so you know exactly what’s in them. At the same time, cooking with skinless chicken breasts is a good way to add lean protein to your diet.

Use Chips To Add Flavor

Your choice of potato chips for this recipe is entirely up to you. Keep in mind that the chips can play a key role in flavoring the chicken. For instance, salt and vinegar chips can give the chicken a distinct flavor, and the same is true for dill pickle flavored chips or sour cream and onion chips, which is one of my top choices with this recipe.

Don’t forget that the crushed chips are part of a mixture that also includes onion powder and garlic powder. You can easily add paprika, chili powder, or other spices to that mixture to influence the taste of the chicken further.

How to make ahead and store

The chicken breasts for this recipe can be prepared up to 24 hours before they go in the oven. Just cover them tightly with plastic wrap or aluminum foil and store them in the fridge. After cooking, leftovers can also be stored in an airtight container and will remain good in the fridge for 3 or 4 days.

Serving Suggestions

Even though you are already using potato chips in the recipe, I actually recommend making Healthy Mashed Potatoes as a side dish with this chicken. For a little change of pace, you may want to try Mashed Sweet Potatoes instead.

If you’re not in the mood for mashed potatoes, another great side dish for this chicken is this KFC Coleslaw Recipe because it goes perfectly with crunchy chicken. Some other side dishes I would suggest for this potato chip chicken include Butternut Squash Mac and Cheese or a Low-Carb Keto Cucumber Salad.

Potato Chip Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • Kosher salt to taste
  • Ground black pepper to taste
  • 1 1/3 cups crushed potato chips
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 large eggs
  • Preferred sauce for serving

Instructions

  • Preheat oven to 375°F. Season chicken breasts with salt and pepper.
  • Separately, combine the potato chips, dried parsley, garlic powder, and onion powder.
  • In a shallow bowl, beat eggs. Dip each chicken breast into the eggs, then coat with crushed potato chips.
  • Place coated chicken on a greased baking sheet and bake for 35 to 45 minutes, or until the internal temperature reaches 165°F.
  • Let the chicken rest for 5 minutes, then slice and serve with your preferred sauce.
