SRSLY though. This might just be the best cucumber salad because it’s:

- STUPID easy
- Make ahead perfect
So, yea. Pretty much all your summer side dish dreams coming true in this cucumber salad recipe. Pair it with some Cajun burgers with sweet potato buns, a low carb cauliflower potato salad and some cheesecake stuffed strawberries and you are ready to be the food VIP of your Fourth of July shin-dig!
Is it just me or is Summer food the absolute best? It’s always so smoky and makes the air smell really good when you’re walking up and down the streets at night, smelling other people’s dinners wafting through the air.
Mr. FFF and I try to go for walks after dinner and I’m always so full. Until I walk outside and smell everything cooking at my neighbor’s house and then – POOF – I want to eat again.
But, back to this low carb keto cucumber salad.
Are cucumbers low carb?
Yes! Cucumbers are made of a LOT of water which naturally makes them low carb.
It also naturally makes them very very hydrating after you drink one too many red white and blueberry mojitos on July 4th, you feel me? ?
You guys know I don’t follow any specific diet, but this cucumber salad recipe just so happens to be low carb and still absolutely fabulous. It’s got this creamy and tangy sour cream dressing with zesty little pops of vinegar and fresh notes of dill spiraling all over your tongue in a way that is just so fresh and addicting!
Better yet, it actually gets better as it sits in the refrigerator and the flavors develop, making it super easy for you to be that food VIP because you can make this a day ahead! Just grab it and GO GO GO!
How to make Low Carb Keto Cucumber Salad Dairy Free
Because Mr. FFF can’t have dairy, I’ve also tested this with both dairy and lactose free sour cream and both work equally great! So, no one has to miss out on the refreshing cucumber salad goodness this summer!
Side note: have also tried it without onions to make it low FODMAP, since he also can’t have onions (??) Works too!
I’m honestly not even sure if we can call this a recipe based on the fact that you mix a few ingredients in a bowl, slice some cucumber, toss it in and – VOILA – it is done!
But, considering I do have some ingredient measurements for you, we’re going to call it a recipe and not look back.
Unless our bowl of cucumber salad is behind us ‘cause then we are looking back A-N-D walking back on over to it.
Trust me my internet friends, you will not be wanting leave this CREAMY cucumber and onion salad alone this Summer.

Low Carb Baked Cauliflower Au Gratin

Ingredients
- 5 Tbsp Full-fat sour cream
- 1 1/2 Tbsp White vinegar
- 2 tsp Fresh dill, minced
- 1 1/4 tsp Monkfruit Sweetener (I use a blend with erythritol - you cab just use regular sugar too!)
- 1/4 tsp Sea salt, or to taste
- 1/8-1/4 tsp Black pepper, to taste
- 1 Large Cucumber, thinly sliced
- 1/4 of a Large Onion, thinly sliced
Instructions
- Mix all of the ingredients up to the cucumber together in a large bowl until well mixed.
- Add in the cucumber and onions and stir to coat.
- Cover and refrigerate for at least 3 hours to develop flavors.
- DEVOUR!

Made it tonight. Used two cucumbers because we have quite a few. Only had dried dill. Used apple cider vinegar and 1/32 tsp powdered stevia. Used a mandolin and sliced the cucumbers thin. Also peeled them first. Will make again. .
