Why You’ll LOVE These Oven Egg Bites
When it comes to the first and MOST important meal of the day i.e break-fast, I want something protein-ish but also really delicious! After all, what do they say? How you start your day determines the rest of your day… or some wisdom like that – You know what I’m getting at.
When you’ve got time on your hands, a Paleo Sweet Potato Hash or Mexican breakfast casserole might be the route to go. This weekend, however, I was hosting my entire family and so these options were thrown out the window, especially for a not-so-morning person like me!
I wanted a breakfast that could be impressive, protein-packed and easy! These stunningly easy Oven Egg bites rescued me in so many ways! Firsty, I could sleep in, enjoying the peace of a Sunday morning wake. Once Mr. FFF bought me my first coffee in bed I was floating to the kitchen, stress-free, (my second point!) ready to make these almost muffin-like egg bites. I was done in less than 30 minutes and ready to enjoy time with my family instead of slaving away in the kitchen.
The Oven Egg Bites are made using a host of ingredients you are NO newbie too. I am not trying to steal the thunder from my ALL TIME favorites like Breakfast Burrito Bowl and Breakfast Cauliflower Pizza, or even PB & J Healthy Soft Oatmeal Breakfast Bars – all the glory to them, but I had to gather all the time I had and feed a fort. With these Cheesy Eggy Bites, I was in and out in less than 30 minutes with a few simple ingredients. The smell coming from the oven was just the bonus that kept the whole family in suspense!
All you need are these very familiar kitchen staples:

How to Make Oven Egg Bites
Crack and Mix
Given this is an egg recipe, I opted for the best quality eggs I could find: Free range grass-fed fresh eggs. Crack your eggs into a large mixing bowl. Whisk together and add the heavy cream, salt, and pepper.
Chop your tomatoes and spinach. Make sure your pieces are not too big and will fit snuggly into your tins.
Grating your cheese is essential here. This will make your family wonder if this is a hybrid between a scrambled egg or a muffin. The grated cheese will give that perfect texture and also melt into the egg custard giving it a delicious savory mystery!
Pssst! Always grease your tin, don’t let non-stick fool you into thinking you can skip that step. It is essential here because we are starting with the cheese. Into your tins, add a teaspoon of the grated cheese, top that with chopped tomatoes and spinach. Pour over the egg mixture and tap the muffin tin gently onto the kitchen counter to remove any air bubbles. Finally, the moment: top with crispy bacon pieces!
Bake the oven egg bites in the preheated oven until golden around the edges.
Best served while warm out of the oven. I had some leftover grated cheese to serve this with and a surprise element: sriracha yogurt! Yes! That’s a thing now, I just made it one! My pleasure FFF family!
This recipe is super easy, and with anything, once the foundations are down you can experiment even further:
- I used cooking spray to grease my tin, but, melted butter works just as great. Brush the tin with melted butter and pop it into the freezer for a few minutes to ensure your grease lining is ready to welcome the fillings!
- De-seed your tomatoes. I used cherry tomatoes which come with the benefits of way fewer seeds. If you are using normal tomatoes, remove the seeds. The additional liquids from the seeds make for a soggy egg bake and we don’t want that!
- We are all about efficiency with this recipe so I recommend pouring your egg mixture into a pouring jug. This will make it so much easier to pour the egg custard into each tin without any mess!

Bacon: although very delicious, I understand you’ll want to know what swaps are possible. I would suggest beef or turkey ham. Fry it in a pan beforehand with a small amount of oil to crisp it up.
Eggs: You can go both ways. Omit the egg yolks or the egg whites (got your back keto-lovers out there). With 8 eggs you are aiming for 11 ounces or 1 ⅓ cups approximately. Ensure you up your egg whites/ yolks to match this.
Reduce salt: Bacon will give so much flavor that you will not need salt at all. You can easily remove the salt if you are after less sodium. Adding additional pepper or even dried herbs like oregano and basil will be a smooth transition for no salt!
How to Serve Oven Egg Bites
The oven egg bites can be served with many side dishes. Think breakfast sides! However, one of my favorite ways to serve egg bites is with Sriracha Yogurt. To make this, mix yogurt with some Sriracha sauce. You can also use sour cream or Greek yogurt. Yum!
For a full meal, serve the egg bites with fresh salad, toast, and a cup of black coffee or orange juice. And for a festive brunch idea, fill the table with pitted olives, bagels, simple tomato salad, and refreshing mint lemonade.
- 8 Medium eggs
- 1/3 cup Heavy cream
- Salt and pepper to taste
- 1/2 cup Fresh grated Parmesan cheese
- 12 Cherry tomatoes
- 3/4 cup Spinach
- 8 slices Bacon
- Cooking spray
- Preheat Preheat the oven to 350F.
- Grease the muffin tin with cooking spray or melted butter.
- In a large bowl, mix eggs with heavy cream, salt, and pepper. Transfer the mixture to a pouring jug.
- To each muffin tin slot, add the grated cheese, chopped tomatoes, and chopped spinach. Give the filling a little press down if needed.
- Pour over the egg mixture and tap gently onto the kitchen counter to remove any air bubbles.
- Top the egg bites with prepare crispy bacon pieces.
- Bake egg bites for 20 minutes.
