If you’re craving a sweet treat but don’t want to mess with the oven, these no-bake cookies are the perfect solution! They come together in about 20 minutes, combining creamy peanut butter, rich cocoa powder, and wholesome oats for a satisfying bite. With just a handful of simple ingredients, you can whip up a batch of these indulgent treats without any fuss.

These cookies strike the perfect balance between indulgence and simplicity, making them ideal for spontaneous hangouts or solo nights in. Whenever I need a quick dessert fix, I know I can rely on this timeless recipe. So, grab your apron, and let’s get to (not) baking!

Are No-Bake Cookies Healthy?

Well, let’s take a look at their nutrition profile. With high amounts of carbs and sugar, these cookies are definitely a sweet treat that should be enjoyed in moderation. However, they also have a nice amount of protein and healthy fats, which adds some nutrition. Plus, with a boost of vitamins and minerals, no-bake cookies are not the worst cookie choice out there. In fact, the oats actually provide some extra fiber, making these no-bake cookies a satisfying snack within a balanced diet.

Should I use natural peanut butter or regular peanut butter?

When choosing between natural peanut butter and regular peanut butter for your no-bake cookies, both options can work, but they bring different qualities to the table. Natural peanut butter is made with just peanuts and possibly a pinch of salt, so it offers a more robust and pure peanut flavor. Plus, it’s healthier, due to it usually being free of added sugars and oils. On the other hand, regular peanut butter often contains sugars and oils, resulting in a creamier texture and sweeter taste. Ultimately, the choice depends on your flavor preferences and dietary goals.

How to make ahead and store

To store leftover no-bake cookies, simply place your scrumptious cookies in an airtight container. You can separate each layer of cookies with parchment or wax paper to prevent them from sticking together. Your cookies will stay fresh for up to 7 days, whether in the fridge or on the counter.

Ingredients

  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 2/3 cup milk
  • Pinch of kosher salt
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup creamy peanut butter
  • 1 1/2 teaspoons vanilla extract
  • 3 1/4 cups quick-cooking oats

Instructions

  • In a medium saucepan, combine butter, sugar, milk, salt, and cocoa powder.

  • Heat over medium heat, stirring frequently, until the mixture comes to a rolling boil. Let it boil for 1 minute without stirring.
