I once had a friend whose mother went on a ketogenic diet cyclically. The last time I saw her, it was Christmas, and she was on it then. It was so much fun watching her craft low-carb dishes. The challenge of meeting her nutritional needs sparked a lot of creativity in the kitchen, and we got to taste-test a few of her successes.

Even though she didn’t invent this keto cabbage soup, it was one of her go-to recipes, especially during the holiday season. It combined her favorite meats with a beloved vegetable from her childhood—tender white cabbage, fresh from a local farmer. What a joy it was to enter her house when it smelled like onion, garlic, and thyme cooking in harmony. And once she finished the soup, keeping it warm on the stove, the aroma would sometimes waft outside so the neighbors knew she was cooking up something special.

Inspired by traditional German cuisine, keto cabbage soup takes an iconic bundle of ingredients and bathes them in a comforting, hearty broth. What does “keto” mean?

The term “keto” is short for “ketogenic,” which refers to a style of diet that focuses on low-carb, moderate-protein food that’s also rich in healthy fats. The goal of a keto diet is to induce ketosis, a process wherein the body burns fat instead of carbohydrates for energy. When a recipe is labeled “keto,” it means this dish doesn’t have a lot of carbohydrates and instead increases the amount of fat and protein consumed.

How do I store leftovers?

Once cooled to room temperature, keto cabbage soup can be stored in an airtight container and refrigerated for up to 3 days. Alternatively, transfer it to a freezer-safe container and freeze for 3 months. Let it thaw in the fridge overnight before reheating on the stove over medium heat. Stir occasionally, adding more broth if necessary, until it’s warmed all the way through.

Ingredients

  • 2 teaspoons olive oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 pound ground beef
  • 5 1/2 cups low-sodium chicken broth
  • Kosher salt to taste
  • 1/2 teaspoon black pepper
  • 1 can diced tomatoes (14 1/2 ounces)
  • 6 cups shredded cabbage about 1 medium head
  • 1/2 teaspoon dried thyme
  • Fresh parsley optional

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; cook until they soften, about 3 minutes.

  • Add ground beef and cook, stirring to break up clumps, until the meat is browned, about 7 minutes. Season with salt and pepper.

  • Stir in diced tomatoes, shredded cabbage, and dried thyme. Pour in the chicken broth, bring to a boil, then reduce heat and simmer for 25 minutes until the cabbage is tender. Taste and adjust seasonings as needed.
