My cousin loves homemade pasta, and she’s tried to make all kinds of different pastas and noodles by hand. One of the trickiest she’s told me about is homemade egg noodles, which require the perfect ratio of flour, egg, and water to craft. If there’s not enough moisture, the dough becomes dry and chewy. If there’s too much moisture, the noodles practically dissolve when cooked in boiling water.

Luckily, this recipe for homemade egg noodles simplifies the whole process. After following four easy steps, you’ll have a family-sized pot of scrumptious, fluffy egg noodles. With their tender texture and rich flavor, these noodles are great with all kinds of sauces, soups, and even casseroles.

One of my family’s favorite ways to enjoy egg noodles is under a creamy gravy sauce with ground beef—a classic dish with Russian origins known as beef stroganoff. But there are many other options for customizing these noodles, from Italian meat sauce to Asian sweet and sour sauce. Once you master the art of preparing these versatile noodles, you might never want to buy them from the store again!

Are Homemade Egg Noodles Healthy?

Egg noodles primarily contain carbohydrates, but each serving does contain a small amount of protein. When serving, consider adding a lean protein like chicken breast to increase the protein levels further. You can also top these noodles with fresh vegetables to enhance their nutritional profile. This egg noodle recipe is appropriate for vegetarians, and tofu or other meat substitutes can keep this dish vegetarian-friendly.

Are Egg Noodles Italian?

Even though I first heard about this recipe from my Italian-American cousin, most historians believe that egg noodles originated in China many centuries ago. While the details of this dish’s origin story remain fuzzy, it’s clear that they’ve become especially popular in European dishes over the years. German egg noodles, for example, are famously known as spätzle. Since their original inception, egg noodles have made a significant impact on almost all Western culinary traditions, from European to American cuisine.

How do I store leftovers?

Leftover cooked egg noodles can be transferred to an airtight container and refrigerated for up to 3 days. For longer storage, move the noodles to a freezer-safe container and freeze them for 2-3 months. Before reheating frozen noodles, make sure to thaw them in the fridge overnight. Then, simply pop them in the microwave for 1-2 minutes until they’re warmed through. Alternatively, you can reheat your egg noodles on the stove at medium heat with some broth or olive oil, stirring occasionally so they don’t burn.

Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 teaspoons salt
  • 3 large egg yolks
  • 1 large egg
  • 5 tablespoons water plus more if needed

Instructions

  • On a floured surface, combine flour and salt. Create a well and add the egg yolks along with the whole egg. Gradually incorporate water, adding one tablespoon at a time with your fingers until a dough is formed; stop adding water once the dough comes together.

  • Knead the dough by hand for approximately 10 minutes until it is smooth and elastic. Allow the dough to rest for 10 minutes.

  • After resting, roll out the dough into a rectangle (about 1/8-inch thick) and cut it into strips between 1/8-inch and 1/4-inch wide using a knife or pizza cutter.

  • Bring a large pot of salted water to a boil. Add the freshly cut noodles and cook for 2 to 4 minutes until tender. Drain the noodles and serve with your favorite sauce or in soup.
