A one-bowl, golden brown dish that melts in your mouth and makes a great breakfast, lunch, or dinner.

Not all casseroles make a great meal at any time of day, but this is one of the exceptions. Green chili egg casserole is easy to make, only takes one bowl and one baking dish, and comes out golden and fluffy. One look at this cheesy masterpiece will make your mouth water and leave you begging for leftovers!

Whether it’s for a holiday brunch or a simple weekday dinner, this simple recipe is a solid contender. It’s full of cheese, onion, and garlic, making it complementary to sweeter breakfasts like pancakes or smoothies.

Is Green Chili Egg Casserole Healthy?

While this dish has a lot of fat, it’s also protein-rich, making it an excellent and hearty way to start the day. (You can thank the eggs and cottage cheese for that!) While it is vegetarian, it’s certainly not vegan. Use a 1-to-1 gluten-free flour if needed.

Try a “Green Chili Eggs and Ham” Brunch

As an homage to Dr. Seuss’s classic “Green Eggs and Ham,” top your casserole with a spread of Broccoli Pesto and serve with a side of bacon. To keep the green theme going, add some vibrant sides like Roasted Broccoli, Snow Peas, or this Green Smoothie. And if you’re feeling experimental and want actual green eggs, try adding a 1/2 teaspoon of spirulina powder to your casserole batter.

How to make ahead and store

Let the casserole cool to room temperature before covering and storing in the fridge. It can be stored like this for up to 2 days. Enjoy it as soon as possible for the fluffiest experience. I don’t recommend freezing it. To reheat, simply pop in the oven in the same dish for 10 to 15 minutes at 350 degrees Fahrenheit.

Serving Suggestions

To dress up your green chili egg casserole, you can add chopped veggies or bacon bits to the batter for extra flavor and texture, or spice it up with a dash or two of your favorite hot sauce. To bring out more of the spicy Southwest flavors, add a side of Air Fryer Fingerling Potatoes and Tomatillo Salsa. Some people also enjoy this casserole with a Homemade Bloody Mary, a garden-fresh drink full of tangy flair.

Personally, I like green chili egg casserole best with Chunky Guacamole and Mexican Rice, but you can play with the pairings and find your favorites!

Ingredients

  • 12 large eggs
  • 1/3 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 16 ounces cottage cheese
  • 12 ounces Monterey Jack cheese shredded
  • 4 tablespoons unsalted butter melted
  • 2 4-ounce cans diced green chilies
  • Freshly chopped cilantro for garnish

Instructions

  • Preheat the oven to 350°F and grease a 9×13 inch baking dish.

  • In a large bowl, whisk eggs until frothy. Add flour, baking powder, onion powder, garlic powder, and salt, and mix until smooth.

  • Stir in cottage cheese, half of the Monterey Jack cheese, melted butter, and green chilies until well combined.

  • Pour the mixture into the prepared baking dish. Sprinkle with remaining shredded cheese.
