Who doesn’t love fingerling potatoes? They are delicious, versatile, and full of flavor. Plus, they are easily accessible and don’t cost a lot of money at the grocery store or farmer’s market. I don’t know about you, but I could probably eat fingerling potatoes for every single meal. From fries to chowder to soups, when it comes to these cute potatoes, I’m up for it all.

If you love fingerling potatoes as much as I do and are running out of ways to use them, let me introduce you to fingerling potato wedges. This recipe is especially easy and delicious, with only three simple steps: preheat the air fryer, season the potatoes, and let them cook until they’re golden brown. These wedges are savory, perfectly herbed, and work great for breakfast, lunch, or dinner.

Fresh fingerling potatoes work great alongside a juicy hamburger, or even as a side to a breakfast omelet for brunch! What’s more, you can make them your own by spicing them up with hot sauce or different seasonings. Give them a try, and prepare to be blown away.

Fingerling potatoes are originally from the Peruvian Andes Mountains and are actually believed to be the oldest variety of potatoes. They were used in South American recipes long before they were discovered by Spanish sailors in the 16th century and brought back to Europe. Since then, these finger-shaped taters have been incorporated into all kinds of dishes: spicy, creamy, peppery, and, of course, fried. Plus, these potatoes are a very common produce item at grocery stores and a vegetable that can easily be grown in your garden. So, if you’re looking to develop a green thumb, this could be a great one to start with!

How Do I Store Leftovers?

In a well-sealed container, these wedges can be stored for up to 4 days in the refrigerator. To reheat, pop them back in the air fryer at 350°F for 5-7 minutes. I don’t recommend freezing them, as the thawing process could ruin their tender texture.

Ingredients

  • 1 pound fingerling potatoes halved lengthwise
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the air fryer to 400°F.
  • In a bowl, toss the halved fingerling potatoes with olive oil, garlic powder, dried parsley, salt, and pepper until evenly coated.
