Ingredients
- 12 large eggs
- 1/3 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 16 ounces cottage cheese
- 12 ounces Monterey Jack cheese shredded
- 4 tablespoons unsalted butter melted
- 2 4-ounce cans diced green chilies
- Freshly chopped cilantro for garnish
Instructions
- Preheat the oven to 350°F and grease a 9x13 inch baking dish.

- In a large bowl, whisk eggs until frothy. Add flour, baking powder, onion powder, garlic powder, and salt, and mix until smooth.

- Stir in cottage cheese, half of the Monterey Jack cheese, melted butter, and green chilies until well combined.

- Pour the mixture into the prepared baking dish. Sprinkle with remaining shredded cheese.

- Bake casserole for 40 minutes, or until the edges are golden and the center is set.

- Sprinkle with fresh cilantro when serving.
