This golden brown omelette is stuffed with veggies and feta cheese, worthy of the Greek gods!

Envision yourself reclining on a terrace that overlooks the Mediterranean Sea. Crystal-clear waves twinkle with fresh morning light as the sun rises over the island-speckled horizon. Alongside the scent of seawater, you catch a whiff of oregano and fresh mint. Someone’s cooking a special breakfast, just for you.

This Greek omelette is a gift from the gods! But you don’t need to fly to Greece to enjoy it. In just 10 minutes, you can experience this little piece of paradise for yourself, in the comfort of your own home. Packed with the classic combo of tomatoes, spinach, kalamata olives, and feta cheese, this omelette is perfect by itself or with a side of golden brown Air Fryer Breakfast Potatoes.

Whether you make one serving for yourself, or multiply the batch for your family and friends, the Greek omelette is a tasty way to start your day.

Is Greek Omelette Healthy?

Not only is it tasty, this recipe is also healthy. It’s got plenty of protein, fiber, vitamins, and minerals. There’s no added sugar, gluten, or meat. To make it dairy-free, simply replace feta with dairy-free cheese or omit altogether. Easy peasy!

Gear Up For A Gyro Omelette

Want to take this omelette a step further? Consider incorporating a Greek classic: gyro. Gyro is rotisserie-cooked meat that’s sliced and typically served wrapped in a pita or over rice. While it’s not typically included in a Greek omelette, it’s an interesting variation to try!

You can find pre-cooked gyro meat at larger grocery stores like Costco, or you can cook a homemade version that mimics the flavor of the spit-roasted meat. For a vegetarian option, add some crumbled Baked Falafel or Roasted Chickpeas to your omelette instead.

How to make ahead and store

Ingredients

  • 3 large eggs
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh spinach
  • 3 tablespoons diced tomatoes
  • 1 tablespoon chopped kalamata olives
  • 2 tablespoons crumbled feta cheese
  • 1/4 teaspoon dried oregano
  • Fresh herbs chopped, for garnish (such as parsley or mint)

Instructions

  • In a bowl, beat the eggs with salt and pepper.

  • Heat olive oil in a nonstick skillet over medium heat. Add the beaten eggs, allowing them to set slightly, then sprinkle spinach, 2 tablespoons tomatoes, olives, and feta cheese evenly over the eggs.
