The options for gluten-free baked goods have significantly improved since I had to start serving GF foods in my home over 20 years ago. Not only are there more products to buy, but the sheer volume of recipes available makes it easier than ever to cook and bake gluten-free at home. Take this recipe for gluten-free hamburger buns. It’s easy and delivers fluffy, delicious rolls. They taste so much like regular buns that you may have to reassure your gluten-sensitive dinner companions that they really are free of gluten!

This recipe calls for a gluten-free flour blend that is suitable for yeast baking. This doesn’t mean the flour contains yeast—it means the blend is formulated to work well in recipes that use yeast, like these hamburger buns. Not all gluten-free flours are appropriate for yeast doughs, so be sure to choose one labeled for yeast baking or bread making. Also, check the ingredients list, as some gluten-free blends may contain dairy, which may not be suitable for everyone.

While the recipe directs you to make eight buns, you can make 10 or 12 that are smaller to use for sliders—or roll them longer and narrower to accommodate hot dogs. Just avoid overhandling the dough and leave at least two inches between each dough ball on the baking sheet, as they will rise and expand.

There are numerous options for regular burger buns at most stores. Why shouldn’t you have the same variety with your gluten-free burger buns? It’s easy to change up the taste of these buns by swapping out the sesame seeds for poppy seeds, sea salt, toasted onions, everything bagel seasoning, or fresh herbs like rosemary, dill, garlic, thyme, parsley, or oregano.

You can also add spices like garlic powder, Italian seasoning, onion powder, or dried herbs such as oregano, rosemary, thyme, basil, and parsley. Or mix minced onion or garlic right into the dough. Or you could swap the sugar for honey, which changes the taste a little while still producing outstanding results.

How do I store leftovers?

Gluten-free bread is more prone to mold and drying out than regular bread, so storing leftovers properly is important. If you plan to eat the buns within 2 days, keep them in an airtight container or bag in the fridge. For longer storage, freeze the sliced buns in a zippered freezer bag—placing parchment or wax paper between each half to prevent sticking. Let the buns thaw at room temp or warm them briefly in the oven or toaster for the best texture.

Ingredients

  • 1 1/2 cups warm water about 110°F
  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 tablespoons granulated sugar
  • 2 large eggs at room temperature
  • 3 tablespoons unsalted butter melted
  • 3 cups gluten-free flour yeast baking blend
  • 2 pinches kosher salt
  • 1 large egg for egg wash, beaten with 1 tablespoon of water
  • Sesame seeds for topping, optional

Instructions

  • Combine warm water, active dry yeast, and sugar in a small bowl. Let sit for 5 minutes until frothy.

  • In a large bowl, whisk together 2 large eggs and the melted unsalted butter. Gradually add the gluten-free flour blend and salt, mixing until a sticky dough forms.

  • Preheat the oven to 400°F. Brush the tops of the risen buns with the beaten egg wash. Sprinkle sesame seeds over them if desired.
