As my family and I prepare for summertime picnics at the lake, I’m pondering new ways to up the health factor for our food selection. When we grill burgers, my mom often skips the bun because it’s too many carbs for her. But this year, I’m thinking of crafting keto hamburger buns, which are low-carb and super satisfying.

The trick here is in the mozzarella, cream cheese, egg, and almond flour, all of which combine to create a protein-rich, high-fat bun that could put store-bought ones to shame. Without even adding cheese to your burger, it will already be savory and flavorful beyond measure. Are keto buns always gluten-free?

They use different kinds of starches, like almond flour or rice flour. To keep it simple, and so that you always know the ingredients, I recommend sticking to homemade keto buns. This gives you total control over what you include in the dough, as well as the ability to replicate it whenever you’d like with the same simple ingredients.

How do I store leftovers?

Once cooled to room temperature, keto hamburger buns can be placed in a plastic Ziploc bag and refrigerated for 3-4 days. For longer storage, transfer them to a freezer-safe container, making sure to lay them flat so they don’t freeze together. Then freeze them for up to 1 month. This kind of storage makes them an easy choice when meal-prepping for the entire summer. Just make sure to thaw them in the fridge overnight before using them at room temperature the next day.

Ingredients

  • 1 1/2 cups shredded mozzarella cheese
  • 1 ounce cream cheese
  • 1 large egg, beaten, plus extra for brushing (optional)
  • 1 cup finely ground almond flour
  • 1/2 teaspoon garlic powder
  • 1 tablespoon baking powder
  • White sesame seeds optional

Instructions

  • Preheat your oven to 425°F. In a microwave-safe bowl, mix together the mozzarella and cream cheese. Microwave for 1 minute, stir, and then microwave for another 30 seconds until fully melted and smooth.

  • Mix the beaten egg, almond flour, garlic powder, and baking powder into the melted cheese until fully blended.

  • Lightly oil your hands. Divide the dough into 4 equal portions and shape each into a bun on a parchment-lined baking sheet. Brush with extra beaten egg if desired and sprinkle sesame seeds on top.
