This Fried Egg Burger brings breakfast and lunch together in one delicious, all-day bite.

I am a sucker for breakfast. If I find a place that serves breakfast all day, it becomes my favorite restaurant. And I make my family have breakfast for dinner at least once a week. There is something about perfectly made bacon and eggs that you just cannot go wrong with—plus, they go incredibly well with a good, juicy burger.

The origin of the fried egg burger is still debated. It’s widely believed that Otto Kuase of Hamburg, Germany, who is credited with inventing the original hamburger in 1891, also topped it with an egg. What we know for sure is that a fried egg burger is the perfect blend of breakfast and lunch, with the rich flavors of seasoned ground beef, the saltiness of bacon and eggs, and the creamy, nutty sweetness of avocado. With every bite, you get a harmonious mix of flavors that makes you crave more.

Are Fried Egg Burgers Healthy?

Unfortunately not. Though the avocado is a source of healthy fats and the beef and eggs provide protein, bacon and cheese add a lot of cholesterol and saturated fats. You could use lean ground beef (or even ground turkey), low-fat cheese, and soft, whole-wheat rolls instead of potato buns. For a gluten-free or low-carb option, try replacing the bun with a lettuce wrap.

Should I use brown or white eggs?

The decision to use brown or white eggs for a recipe is a question I often get asked, so let’s break it down. Brown eggs tend to be more expensive than white eggs. This isn’t because they’re superior in terms of taste or nutritional value—both are virtually identical—but rather because brown eggs come from larger breeds of hens. These larger hens require more food, which raises the cost of production.

If you want the best eggs for any recipe, focus less on color and more on freshness and quality. Farm-fresh or organic eggs often provide the richest flavor and texture, regardless of their color. Pasture-raised eggs will also have more vitamin D, since the hens are allowed to spend plenty of time outdoors in the sunshine.

Ingredients

  • 8 slices bacon
  • 4 burger patties 6-ounces each
  • 4 slices cheddar or Colby Jack cheese
  • 4 potato buns
  • 1 avocado peeled, pitted and sliced
  • 4 eggs
  • Salt and pepper to taste
  • Ketchup for serving

Instructions

  • Cook the bacon in a skillet over medium heat until crispy, about 10 minutes. Transfer to paper towels to drain excess grease.

  • In the same skillet, cook the burger patties over medium-high heat for 4 to 5 minutes per side. Add a slice of cheese on top of each patty during the last minute of cooking to melt.

  • Assemble the burgers by placing sliced avocado and bacon on the bottom halves of the buns, then add the cheese-topped burger patties. Keep them warm.

  • Fry the eggs in the skillet to your desired doneness, season with salt and pepper, and place one egg on top of each burger. Complete the burger with the top half of the bun.
  • Serve the burgers immediately with ketchup and additional salt and pepper, if desired.
