It can be frustrating to wake up craving something for breakfast, only to discover that you are missing an ingredient. That happened to me one morning when I really wanted waffles but was out of eggs. Thankfully, this eggless waffle recipe came to my rescue, and I’ve never looked back. In fact, I often make them even when I have eggs in my refrigerator—and with the cost and limited availability of eggs these days, this recipe couldn’t be more timely.

I love waffles so much that I have multiple waffle makers. One makes traditional squares, another makes character shapes, and, of course, my Belgian waffle maker that makes thick, fluffy waffles. I even have a silicone waffle tray so I can cook these waffles on a baking sheet in the oven. This recipe works in all of them, so don’t worry about which one you have. You will still enjoy waffles that are crispy on the outside, light and fluffy on the inside, and just begging for some maple syrup or fruity toppings. They have all that rich, buttery flavor of traditional waffles, thanks to the homemade buttermilk and a touch of vanilla extract.

I recently made these waffles as part of a festive brunch, and no one noticed they didn’t contain eggs. A few guests even asked for my recipe—they were that good. That’s what we all want—our meals to be so tasty that others want to know our secrets!

I went to buy a dozen eggs the other day, and the shelves were empty—again! That meant I had to rethink some of the meals I had planned to make. Luckily, I have an arsenal of eggless recipes that bypass those little oval wonders to simplify meal planning and baking.

How do I store leftovers?

Leftover eggless waffles can be stored for later by letting them cool to room temp and refrigerating them in an airtight container for up to 4 days. You can also freeze them—ideally in a single layer or separated by parchment paper to prevent sticking—for up to 1 month. Reheat them directly from the fridge or freezer in a toaster oven or regular oven until heated through.

Serving suggestions

This eggless waffle recipe shines when paired with toppings such as Cinnamon Applesauce, Orange Curd, or Strawberry Yogurt. Top your waffles with a sliced banana and this delectable Salted Caramel Sauce for the ultimate decadent breakfast or brunch. Eggless Waffle Recipe

Ingredients

  • 2 cups whole milk divided
  • 1 1/2 tablespoons distilled white vinegar
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/3 cup unsalted butter melted, plus more for greasing waffle iron
  • Preferred toppings such as maple syrup, fresh fruit, or powdered sugar

Instructions

  • In a bowl, combine 1 1/2 cups of the whole milk with the distilled white vinegar. Let sit for 5 minutes until the milk curdles and forms buttermilk.
  • In a separate large bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. In another bowl, mix together the remaining 1/2 cup milk, granulated sugar, vanilla extract, and melted butter.

  • Combine wet and dry ingredients (including the buttermilk), stirring gently until just mixed—small lumps are okay. If the mixture is very thick, add a splash of water to loosen it.

  • Cover the bowl and let the batter rest for 15 minutes to allow it to develop flavor.
  • Preheat your waffle maker. Lightly grease the plates with a brush of melted butter.
  • Pour the batter into the waffle iron and cook it following the manufacturer's guidelines, typically 3-5 minutes per waffle. Continue this process with the remaining batter.

  • Transfer the waffles to a cooling rack or keep them warm in a 200°F oven. Serve immediately with preferred toppings for the best texture.
