In just 20 minutes, you can make a fabulous French toast without any eggs at all. The magic is in the batter: a basic mix of milk, sugar, cornstarch, vanilla, and cinnamon. Cornstarch acts as a thickener and brings the bread to golden brown perfection. It’s so good, nobody will miss the eggs.

Whether you pick white bread, whole wheat, cinnamon swirl, or sourdough, thick slices are the way to go for a firm and flavorful French toast.

How to make ahead and store

While eggless French toast is best served fresh, the benefit of it not having eggs is it lasts longer than French toast made with eggs. Store covered in the fridge for up to 4 days, or freeze for 1-2 months. Thaw in the fridge overnight and reheat in the oven at 350°F for 10-15 minutes.

Ingredients

  • 3/4 cup almond milk or any preferred milk
  • 1 teaspoon granulated sugar
  • 2 tablespoons cornstarch
  • 1 1/4 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 4 slices thick bread
  • Unsalted butter as needed
  • Maple syrup and fresh fruit for serving

Instructions

  • Whisk together milk, sugar, cornstarch, vanilla extract, and cinnamon until there are no lumps. Transfer to a shallow dish.

  • Dunk each slice of bread into the mixture before any cornstarch settles at the bottom of the dish. Dip the slices for a few seconds, being careful not to oversoak them.
