Spice up any breakfast with homemade sausage patties that will knock your socks off!

A stack of four breakfast sausage patties with a fried egg and toasted bread on a pink plate.

Whether it’s eggs, pancakes or a simple bagel, I just LOVE breakfast food. But sometimes, what I really need is a heartier breakfast to start my day. On those days, I love a delicious homemade breakfast sausage on my plate. A well-rounded breakfast with a balance of protein and carbs really gives me the energy to conquer the day.

Of course, you can buy frozen or even fully cooked breakfast sausage patties at your local grocery store. But the great thing about using this recipe is that it allows you to use a variety of spices that will really take your sausage patties to the next level. By mixing ground pork with these spices and a little bit of maple syrup, you’ll end up with a savory sausage patty that you’ll remember all day. This breakfast sausage patty is full of flavor and will probably outshine any store-bought frozen breakfast sausage you’ve ever had.

Is Breakfast Sausage Healthy?

While breakfast sausage is usually considered to be high in fat and sodium, this recipe can help you minimize those factors. Instead of excess salt, this recipe calls for a variety of spices to provide flavor, which isn’t commonly found in store-bought sausage. Also, let’s not forget that the ground pork in breakfast sausage is a good source of protein. However, ground pork can be high in fat, so anyone who is watching their fat intake closely may want to select an 80% lean, 20% fat blend.

Ingredients for Breakfast Sausage: ground pork, dried sage, thyme, brown sugar, maple syrup, salt, and red pepper flakes.

Control the Spiciness

Even if you like the heat, you may not want to start your day with a spicy breakfast sausage. Luckily, you can make subtle changes to the recipe to control how spicy the breakfast sausage will be. Consider reducing (or eliminating) the amount of black pepper, crushed red pepper flakes or paprika in the mixture. You can also counteract the spice by adding more dried herbs or by amping up the sweetness in the recipe with some extra brown sugar and maple syrup.

How to make ahead and store

You can prepare the mixture for breakfast sausage up to 3 days before cooking. Make sure you keep the mixture refrigerated and covered until you’re ready to form the patties and cook them. Once cooked, leftovers can be stored in the fridge in an airtight container for up to 3 days.

Serving Suggestions

Breakfast sausage can be a delicious addition to almost any food on your plate. It’s a delicious side next to Soft Scrambled Eggs, Air-Fryer Fried Eggs or a Spinach Omelette. I also like to make breakfast sausage when I’m eating my favorite Pancakes Recipe. There’s almost nothing better than sweet maple syrup poured all over the pancakes and sausage. For an even heartier breakfast, enjoy your breakfast sausage alongside a Cheese Omelette and Breakfast Potatoes.
