This Chicken Thigh Marinade brings bold, savory flavor and juicy perfection to every bite.

Chicken is one of the most versatile proteins out there, and the possibilities for cooking it are endless. But when it comes to choosing a cut, chicken thighs are my go-to every time. Naturally tender and flavorful, they offer a richness that chicken breasts simply can’t match. And while chicken thighs are delicious on their own, the right marinade can take them to a whole new level of mouthwatering perfection. That’s exactly why I’m so excited to share this chicken thigh marinade recipe with you.

What makes this marinade special is its delightful simplicity. And you most likely already have all the ingredients in your pantry. No fancy techniques or labor-intensive steps—just a quick whisk of ingredients, and you’re good to go. With the perfect balance of sweet and savory notes, this marinade enhances the natural juiciness of chicken thighs. Let them soak for a few hours (or overnight if you have time), and you’ll end up with chicken so flavorful, you’ll want to make it again and again.

Is Chicken Thigh Marinade Healthy?

This chicken thigh marinade keeps things simple without significantly impacting the nutritional profile of your meal. While it does include small amounts of brown sugar and honey, the total sugar content remains low when divided across servings. Similarly, though soy sauce contains sodium, the overall amount in the marinade is minimal, but you can always swap it for a low-sodium soy sauce if it concerns you.

Add A Little Twist

Depending on how you like your chicken to taste, you can always add an extra ingredient or two to this marinade to alter it a little. For example, if you like spicy chicken, add a few drops of hot sauce or some red pepper flakes to the marinade. If you prefer more mild herbs, basil, rosemary, and sage will all blend well with the other ingredients. You can even create an Asian-style marinade by including fresh ginger and sesame oil. No matter how you prefer the marinade, try to marinate your chicken thighs for up to 12 hours for optimal flavor.

How to make ahead and store

You can make this chicken thigh marinade up to 1 day in advance. Just cover it and place it in the fridge until you’re ready to marinate the chicken thighs.

Serving Suggestions

Once you’ve marinated your chicken thighs, there are several viable cooking methods. I usually prefer to make Easy Air-Fryer Chicken Thighs, however, you can also consider Pan-Fried Chicken Thighs or Oven-Baked Chicken Thighs (just swap out the coatings in these recipes for our marinade). If you want a good side dish for your chicken thighs, I suggest Carolina Coleslaw or classic Pasta Salad. If you prefer a vegetable side dish, I recommend Instant-Pot Butternut Squash or Roasted Green Beans. You can also keep it simple with Boiled Corn on the Cob.

Chicken Thigh Marinade

Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons soy sauce
  • 1 teaspoon lemon zest
  • 1 1/2 tablespoons brown sugar
  • 2 teaspoons chopped fresh parsley
  • 2 cloves garlic minced
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon honey
  • 1 tablespoon fresh thyme leaves chopped
  • 1 teaspoon lemon juice
  • 2 pounds chicken thighs

Instructions

  • Whisk all marinade ingredients in a bowl until well combined.
  • Place the marinade in a glass container with a tight lid, or a ziplock bag. Add chicken thighs, and marinate for 12 hours. Remove chicken from marinade and drain. Discard marinade.
  • Fry, grill, or bake chicken thighs using your favorite method.
