- 2 cups whole milk divided
- 1 1/2 tablespoons distilled white vinegar
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/3 cup unsalted butter melted, plus more for greasing waffle iron
- Preferred toppings such as maple syrup, fresh fruit, or powdered sugar
Instructions
- In a bowl, combine 1 1/2 cups of the whole milk with the distilled white vinegar. Let sit for 5 minutes until the milk curdles and forms buttermilk.
- In a separate large bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. In another bowl, mix together the remaining 1/2 cup milk, granulated sugar, vanilla extract, and melted butter.

- Combine wet and dry ingredients (including the buttermilk), stirring gently until just mixed—small lumps are okay. If the mixture is very thick, add a splash of water to loosen it.

- Cover the bowl and let the batter rest for 15 minutes to allow it to develop flavor.
- Preheat your waffle maker. Lightly grease the plates with a brush of melted butter.
- Pour the batter into the waffle iron and cook it following the manufacturer's guidelines, typically 3-5 minutes per waffle. Continue this process with the remaining batter.

- Transfer the waffles to a cooling rack or keep them warm in a 200°F oven. Serve immediately with preferred toppings for the best texture.
