Ingredients

  • 4 large eggs
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon vegetable oil divided
  • 1 small onion thinly sliced
  • 1/2 large bell pepper sliced
  • 3 garlic cloves minced
  • 1 tablespoon light soy sauce
  • 1 green onion chopped (plus more for garnish)

Instructions

  • Crack eggs into a bowl. Add a pinch of salt and pepper, then beat until combined.
  • Heat 1/2 tablespoon of oil in a large skillet over medium-high heat. Add beaten eggs and stir until softly scrambled.
