These Paleo Cookies are loaded with chocolate chips and made in the crock pot! They’re so easy to make and are a healthy, grain-free treat!
You know what I really hate.
Technology.
Just like Mason jar salads, and people who stay up past 9:00pm (8:30pm if you want complete honesty) I just don’t understand it.
I know. I KNOW. I am just continuing to back up your belief that I am somehow an 80 year old living in a 24 year old’s body.
Like right now. I was about to start writing this post. It was going to be happy and exciting because 1. FRIDAY and 2. Healthy Chocolate Chip Cookies and 3. IN DA CROCKPOT <— More on that in approximately 5-10 sentences.
And then my whole internetz just.stopped.working.
I can’t even go on Instagram on my phone. I mean, did the whole wi-fi universe just GO OFFLINE when I NEEDED IT?
Rude.
How does that make my life easier. Technology? Consider our friendship over.
Until you start working again. You understand.
Rant done.
Now, because you so patiently sat through that (and even if you just scrolled through it, I’ll pretend you didn’t) I have something for yer face.
Something sweet and crispety on the outside, but full of soft and ooey-gooey-chocolatey-nums on the inside.
And even better, something that is made in your CROCKPOT. BUZZ WORD.
You all fuh-reeee-keed out at those energy quinoa breakfast bars in the slow cooker so I decided to give you another little something something. Of course, if you’re not feeling crock pot cookies, you could make these Almond Flour Chocolate Chip Cookies from Meaningful Eats!
Now, let’s be realz for a second mmkay? There are only so much full-of-health and feel-good-wellness energy bars that one human can stuff into their facial holes.
Then, the paleo coconut flour chocolate chip cookies craving comes….and you MUST GIVE IN.
Unless you are a weird super-human person that’s will power is dressed up in a ninja suit AND THEN covered with a suit of ARMOR. Which is all Taylor speak for “you have crazy good willpower and you should probably STAP IT.”
And just eat a cookie. Or 6.
Remember those Paleo Egg Muffins where I told you of Mr. FFF’s new diet? He went from eating a homemade cereal recipe and milk for breakfast, lunch and dinner to eating almond milk and quinoa casserole because he had to try going dairy and gluten free, for some not-so-funny tummy troubles.
Side note: He didn’t think it would work. But, he feels better. I win.
Just don’t tell him I said that.

At the start of his diet there was this moment where I looked over at him, standing in the kitchen and he looked TERRIFIED. Like he was just standing there, frozen in fear.
So, like a good wife, I asked “ARE YOU OK!?” and you know what he said?
HOW CAN I EVER EAT A COOKIE AGAIN? NO COOKIES AND NO CEREAL? HOW WILL LIFE GO ON?!
And he calls ME dramatic.
Clearly, he underestimated my huberoni-friendly baking abilities. UNTIL NOW.
So, I made him (and you!)the BEST paleo chocolate chip cookies.
Of course, this paleo cookie recipe is not egg free. So, if you’re vegan you should make the best vegan chocolate chip cookies from Cotter Crunch!
At first, they were your standard paleo chocolate chip cookies. You know the normal kind that you mix in a bowl (MIX MIX MIX!) and then roll in normal cookie-like circles, and bake them in a normal-cookie-baking oven? Those kind.
He <3 <3 <3 them. I <3 <3 <3 them. We’re talking chewy, nutty-flavored cookies bursting with ooey-gooey chocolate. WHAT IS NOT TO LIVE.
EXCEPT THEN *insert suspenseful pause* he NEEDED to bring cookies to work for a potluck and I NEEDED to use the oven to test a recipe. WHAT TO DO?!
So – LIGHTBULB – I pressed the dough for these paleo chocolate chip cookies with almond flour into the bottom of the slow cooker…BECAUSE WHY NOT?
You guys. I think I might just change FFF into a crock pot blog (don’t hold me to that) because these paleo cookies are the chewiest, but still have DA LIGHT AND CRISP, cookies that I have ever made.
And, Mr. FFF?
Well, he ain’t standing in the kitchen afraid for his life any longer.
Ingredients
- 1/4 Cup Coconut oil melted
- 1 Cup Coconut sugar
- 1 Large egg white
- 1/2 tsp Vanilla extract
- 1 1/2 Cups Finely ground almond meal 5.4oz
- 1 3/4 tsp Baking powder
- 1/2 tsp Salt
- 1/2 Cup Dark chocolate chips
Instructions
- Line a 5 quart crock pot with parchment paper and rub with coconut oil. Set aside.
- In a large bowl, beat together the melted coconut oil and coconut sugar. Add in the egg white and vanilla extract and beat until well combined.
- Pour the almond meal, baking powder and salt into the oil mixture and stir until well combined. Stir in the chocolate chips.
- Transfer the dough into the Crock pot and press down evenly. It can be a little tricky with the parchment paper.
- Cook on LOW heat until the outside of the cookies appear golden brown, and the inside is still soft. About 2 - 2.5 hours. Mine was perfect at 2 hours and 15 minutes. Be careful not to overcook the bars as they firm up A LOT once cooled.
- Once cooked, carefully use the parchment paper as a handle and gently lift the bars out of the Crock pot* and transfer to a rack to cool completely.
- Once cooled, cut and DEVOUR.
