This spicy and creamy Buffalo Cauliflower Dip is a deliciously perfect way to sneak in some of your daily veggies!

If you are looking to add to your game-day recipes, look no further than today’s buffalo cauliflower dip. I love sneaking healthy add-ins into my apps! I get tired of salads and roasted broccoli. Sometimes, I like splurging on some calories while still getting a dose of veggies.

Making homemade game-day apps can be daunting, and I’m not willing to be stuck in the kitchen during the fourth quarter! You might think it’s way easier to buy everything from your local supermarket instead. Honestly, sometimes it is. But I guarantee you can whip up this recipe faster than you could go to the store!

And in case you’re wondering, yes, this dip is delicious! It’s flavorful and features that signature zingy buffalo heat we all love. When game day arrives and I’m hanging with my crew, nothing tastes better than a heaping bowl of buffalo dip. Even better, the dip uses ingredients you may already have on hand. So, if you’re craving something spicy, this recipe is a must-try!

Is This Buffalo Cauliflower Dip Healthy?

This creamy, cheesy, and absolutely yummy dip is not low-fat. But you know what? It’s not a calorie bomb, either. Thanks to the cauliflower, this dip has vitamins C and K, along with some fiber.

Okay, fine—we’ve got cream cheese, cheddar, and Greek yogurt (or sour cream), but you could always use low-fat variants of these ingredients. Me? I’d keep everything as is and treat myself. Maybe you should, too!

Why Roast The Cauliflower?

Roasting the cauliflower is where the magic happens! If you’ve ever tried cauliflower raw or blanched, you probably weren’t impressed. I wasn’t either! However, when you toss cauliflower in the oven, the heat acts like a cocoon, transforming this bland veggie into a flutter of flavor. It tastes nutty and a little caramelized even—the perfect complement to this dip’s creamy sauce!

How To Make Ahead And Store

Dips are great for prepping ahead. Make the dip as instructed and store it in an airtight container in the fridge. It should be good for up to 3 days. When you’re ready to serve, reheat in the oven—a cast-iron pan should work well for this.

Serving Suggestions

This cauliflower dip is perfect for those game-day get-togethers or for any time at all, really! It pairs perfectly with other traditional apps like Oven-Baked Mozzarella Sticks and Air-Fryer Chicken Wings. I also recommend serving this dip with your favorite crackers, or potentially some sliced French bread or soft pitas! Another fun combination would be to serve this dip with Air-Fryer Potato Chips. Whatever way you decide, it will be absolutely delicious!

Buffalo Cauliflower Dip

Ingredients

  • 8 cups cauliflower cut into very small florets (2 pounds of florets or about 1.5-2 heads cauliflower)
  • 2 tablespoons olive oil
  • 2 teaspoon salt divided
  • 1 cup buffalo sauce
  • 8 ounces full-fat cream cheese cut into cubes
  • 6 ounces cheddar cheese grated (1 cup, tightly packed)
  • 3/4 cup low-fat sour cream or 2% Greek yogurt
  • Sliced green onions for garnish

Instructions

  • Preheat your oven to 400°F.
  • Toss the cauliflower with the oil and 1 tsp of salt and spread onto a baking sheet. Roast in the oven until fork-tender and golden brown, about 15-25 minutes, stirring halfway through.
  • Add the buffalo sauce and cream cheese to a large skillet placed over medium heat, whisking until smooth and melted.
  • Once melted, stir in the cauliflower, turn the heat to high, and bring to a simmer. Simmer, stirring frequently, until the sauce begins to thicken, about 4-6 minutes.
  • Remove from heat, and slowly add the cheese, stirring between each addition until melted. Then, stir in the sour cream or yogurt and the remaining salt.
  • Transfer to a cast-iron pan or oven-safe baking dish. Bake until bubbly, about 10-15 minutes.
  • Garnish with green onions, and enjoy with your favorite chips, crackers, or celery sticks!

    could you put this in slow cooker instead of oven after roasting and mixing all ingredients on stove top?

      Hey Keri! Absolutely, that should work well, especially if you want to keep it warm for a party. After you mix everything on the stovetop, just transfer it to your slow cooker. You can heat it on LOW for 1-2 hours until it’s hot and bubbly, then just switch it to the “keep warm” setting for serving. Enjoy!
