Ingredients
- 8 cups cauliflower cut into very small florets (2 pounds of florets or about 1.5-2 heads cauliflower)
- 2 tablespoons olive oil
- 2 teaspoon salt divided
- 1 cup buffalo sauce
- 8 ounces full-fat cream cheese cut into cubes
- 6 ounces cheddar cheese grated (1 cup, tightly packed)
- 3/4 cup low-fat sour cream or 2% Greek yogurt
- Sliced green onions for garnish
Instructions
- Preheat your oven to 400°F.
- Toss the cauliflower with the oil and 1 tsp of salt and spread onto a baking sheet. Roast in the oven until fork-tender and golden brown, about 15-25 minutes, stirring halfway through.

- Add the buffalo sauce and cream cheese to a large skillet placed over medium heat, whisking until smooth and melted.

- Once melted, stir in the cauliflower, turn the heat to high, and bring to a simmer. Simmer, stirring frequently, until the sauce begins to thicken, about 4-6 minutes.

- Remove from heat, and slowly add the cheese, stirring between each addition until melted. Then, stir in the sour cream or yogurt and the remaining salt.

- Transfer to a cast-iron pan or oven-safe baking dish. Bake until bubbly, about 10-15 minutes.

- Garnish with green onions, and enjoy with your favorite chips, crackers, or celery sticks!
