Baked Potato Slices are a fast, inexpensive, hearty snack to feed a crowd—or just yourself.

I don’t know about you, but when I first started cooking potatoes, I could only bake or mash them. That was it. Boy, has my repertoire of potato dishes expanded since then. Potatoes are so versatile, there’s virtually nothing you can’t do with them. They’re just as amazing in simple recipes as they are in complicated ones, and they’re budget-friendly, too. Plus, when cooked in certain ways (in other words, not deep-fried or smothered in cream), they are quite healthy.

One healthy way to cook potatoes is baking them, and there are tons of ways to bake a potato! In this recipe for baked potato slices, the ingredients are simple: potatoes, salt, pepper, and olive oil. You can add whatever seasonings you like, but all you truly need for great results is already in this recipe.

The crispness of the baked potato slices sprinkled with a little salt and pepper reminds me of indulging in a bag of potato chips, but without the fried greasiness (and guilt). Once you make these, they’ll likely become a weekly go-to, since the ingredients are minimal and the results are amazing.

Are Baked Potato Slices Healthy?

Potatoes alone are healthy, have no fat or cholesterol, and are full of vital vitamins and minerals such as potassium. They also contain some fiber. This recipe adds a few teaspoons of olive oil, which brings healthy fats into the mix. Overall, this recipe is low-fat, gluten-free, dairy-free, and vegan. It’s not keto-friendly, though.

If you’re watching your sodium intake, omit the salt and use garlic powder.

The Secret To Crispy Potatoes

If you’re cooking baked potato slices for a crowd, it’s tempting to pile them all onto one baking sheet to get the job done faster. Resist the temptation! The secret to crispy potato slices is laying the slices in a single layer on the pan so that each potato slice gets brown and crispy. If you stack them on top of each other, the slices will steam, and you will end up with mushy or unevenly cooked potatoes. So if you’re baking a lot of these, cooking in batches will ensure that all your potato slices come out crispy.

How To Make Ahead And Store

You can store leftover baked potato slices by placing them in an airtight container or wrapping them in foil, then storing them in the refrigerator for up to 4 days. You can also freeze baked sliced potatoes for up to 6 months.
Simply crisp them up in the oven or air fryer when you’re ready to reheat. If frozen, thaw them in the fridge overnight before reheating.

These baked potato slices are like a little black dress; they go with everything. It’s actually harder to think of what you can’t serve these potatoes with rather than what you can. They’re also excellent flying solo!

By themselves, baked potato slices are amazing with a number of dips, including Tzatziki Sauce and Lemon Aioli. Also, I’ve been known to melt a handful of grated pepper jack cheese on top of these potatoes and eat them with pickled jalapeño slices.

For a traditional meal, serve up a side of baked potato slices next to an Oven-Cooked Top Sirloin Steak or a Keto Steak With Garlic Butter Mushrooms; there’s nothing better than steak and potatoes.

On the lighter side, potatoes are a great partner to a seafood main course or a big salad. I love Baked Honey-Cajun Salmon or Grilled Tilapia with a side of baked potato slices. And what’s more refreshing than a summer salad and potatoes? A Mediterranean Cucumber Salad along with your baked potato slices is a light and healthy meal. Or how about a Balsamic Grilled Vegetable Salad? No matter what you serve these with, baked potato slices go a long way, are budget-friendly, and are a healthy dish for any meal.

Ingredients

  • 4 medium russet potatoes
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • Cracked pepper to taste

Instructions

  • Preheat the oven to 400°F. Ensure the rack is in the middle position for even cooking.
  • Peel the potatoes, rinse them thoroughly, and pat them dry with a clean towel to remove excess moisture.

  • Using a mandoline slicer or a sharp knife, carefully slice the potatoes into even rounds, aiming for a thickness of about 1/8 inch.

  • Arrange the potato slices in a single layer on a baking sheet lined with parchment paper, ensuring they do not overlap for even baking.

  • Drizzle the olive oil over the potato slices, then season with salt and cracked pepper.
  • Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy. Flip halfway through for even crispiness.
