Ingredients
- 4 medium russet potatoes
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- Cracked pepper to taste
Instructions
- Preheat the oven to 400°F. Ensure the rack is in the middle position for even cooking.
- Peel the potatoes, rinse them thoroughly, and pat them dry with a clean towel to remove excess moisture.

- Using a mandoline slicer or a sharp knife, carefully slice the potatoes into even rounds, aiming for a thickness of about 1/8 inch.

- Arrange the potato slices in a single layer on a baking sheet lined with parchment paper, ensuring they do not overlap for even baking.

- Drizzle the olive oil over the potato slices, then season with salt and cracked pepper.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy. Flip halfway through for even crispiness.

- Remove from the oven and let cool slightly before serving.
