This grilled vegetable salad. I can’t even.
Ok, not quite the end. But, FO’ REALZ, I am really struggling with words to say to you about it. And not because it’s like that awkward moment at Christmas when Grandma Sally gives you the SAME sweater that she did last year, and you have to think of something nice to say even though it’s so ugly but you. Just. Can’t. Think. Of. Anyhting.
No, today’s loss of words is due to sweet balsamic vinegar, creamy feta, salty little caper-y bites. The loss of words is from something SO simple that I really did not think that it would be my most FAVORITE recipe to date.
Yep. You’re looking “Taylors-Favorite-Recipe-Until-Next-Next-Week” straight in the face.
Usually, it’s only until NEXT week. Clearly, this salad is up to something.

Let me tell you a grilled, vegetal tale. I went to the land of yore (Wisconsin) 3 weeks ago. Each night a royal couple (except we aren’t royal, just a couple. Period) took turns making dinner.
I made this chicken kebab recipe, couscous andddd this salad.
Let me just tell you friendly-friends, it was a H-I-T. My almost-sister-in-law described it as “Epic.”
Side note: Remember when we discussed this couscous salad and how I made it when I went to meet my in-laws in WI for the first time EVAH, and my grandpa was obseseed with saying “couuuuussss couuuussss”
Well, it happened again, so ’ll say it again: make couscous for your grandparents. It’s a night full ‘o fun. And yumminess.
Now the steps of the grilled vegetable salad:
1. Soak veggies in marinade.
2. After the veggies have had a nice long soak-a-roo, toss ‘em right up in yo’ grill…I mean onto your grill.
3. While they get all hot and sweaty, pop the marinade into yo’ blender, add a couple other yum-diddly-doos (which means capers and sun dried tomatoes) and press GO. Or start, if your blender isn’t that exciting.
4.DONE. Ok, cheese…then DONE
Is as easy as pie. Except it’s healthier. I do like pie though.
That’s neither here nor there.
