We didn’t really talk about the weekend yesterday, since it was all about BlogHer Food.

I had my first girl’s night in, like, 1 billion years! I am not even joking. With working A LOT, I really haven’t had time to make all the friends, so it was SO nice to get me some lady time!
I also learned something about the huberoni.
So, it’s Saturday night. I’m just finishing up editing some pictures and the hubs is searching Red Box to find a movie for us to watch. Suddenly, he starts getting really excited about a movie and says that he has found the perfect one, that he REALLY wants to watch.
I wasn’t very stoked, because I figured it was going to be some lame one where a guy in underpants and a cape flies around being all “I’m going to save the world from doom and evil,” and those just aren’t my “thang.”
HOW-EV-ER, the movie he wanted to watch? “The Vow.”
Yes, that one with Channing Tatum and Rachel McAdams. Yes, the sappy, romantic movie where Rachel is married to Channing, and then she loses her memory and he is the best hubby EVER, and tries to make her remember him.
I <3 it. It was just surprising coming out my ruff-and-tumble huberoni.
I’ll take it over men flying around in underpants though, that is FO’ SHO’.
So, that’s what we did.
We also ate food, because that is kind of necessary to life right?
I made these baked avocados a while ago, and then I ate them again everyday for ever because they are THAT good.
Avocado is kind of the new trend. Avocado toast (if you follow my Instagram, you will know that I am obsessed with it) and grilled avocado are kind of everywhere. And for good reason because, well, NOM CENTRAL.
These little guys are like a fancy version of the above mentioned snack, but they are secretly SO EASY. Easy like whoa.
Whatever that means.
There’s avocado, which is always a win. Then you mix in creamy goat cheese (my <3) and soft zucchini with sweet balsamic reduction….and, it just makes sense on your taste buds.

Baked stuffed avocados are one of my FAVORITES. I never even knew how de-freaking-licious this could be until I discovered it as a restaurant a year or so ago and now I want to eat it ALL. THE. TIME. I request this during our cookies and cocktail weekend puh-leeeeez!

Wow, I am such a sucker for avocados and always open to new ways of stuffing my face with them! HOW-EV-ER, I am not sure about baking them… I will certain try it to see! Here in Japan, Mexican medium sized avocados can be had for less than $1. Just curious, how much to day cost where you live? (I am eating as many as possible while still living here because I know I:ll have to deal with higher prices once I go home to the states!)
