Sometimes, I put my apron on, go to the kitchen, and find myself stumped. My family is waiting patiently for a marvelous meal, yet all I can think of is plain green beans, which they’re pretty sick of at this point. And so, I turn to crafty recipes like this—bacon-wrapped green beans. These beautiful bundles of green beans are held together by fresh bacon, baked to tender perfection, and brushed with butter, brown sugar, and a blend of savory seasonings. Honestly, I can’t think of a better way to get my loved ones interested in green beans again.

Amazingly, bacon-wrapped green beans can be served for any meal of the day—breakfast, lunch, or dinner. They taste buttery, rich, and dynamic enough to go with all kinds of main dishes. Think fried eggs in the morning, salad in the afternoon, and steak at night. However you want to dish these out, they’re sure to impress, especially for the bacon-lovers in your brood. One whiff of that bacon sizzling in the oven could send them flocking to the kitchen, no matter where they were in the house!

Why do I have to blanch green beans?

Blanching green beans before baking them—as instructed in this recipe—allows them to get nice and tender. Sometimes, if you roast green beans without blanching or parboiling them, they’ll come out tough and slightly crunchy. Our goal for these greens is for each bite to be easy and satisfying.

How do I store leftovers?

Let your bacon-wrapped green beans cool briefly, and then store them in an airtight container. Refrigerate for 3 to 5 days, and then reheat in the oven at 350°F for 10 to 15 minutes, until they’re completely warm. Feel free to brush them with extra butter or oil if needed to keep them moist.

Ingredients

  • 6 slices bacon cut in half
  • 1 1/4 pounds fresh green beans
  • 3 tablespoons melted butter
  • 2 tablespoons brown sugar
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  • Preheat your oven to 400°F. Arrange the bacon strips on a sheet pan and bake for 7 minutes, then remove and set aside.

  • Wash the green beans and trim the ends. Blanch them in boiling water for 2-3 minutes until they turn bright green, then drain and pat dry with a kitchen towel.

  • Take about 5-9 green beans and arrange them on a half strip of bacon. Roll the bacon around the beans and place each bundle seam-side down on the prepared baking sheet.

  • Brush the bundles with melted butter, and then evenly sprinkle the bundles with brown sugar, salt, pepper, garlic powder, and onion powder.

  • Bake in the preheated oven for about 18-23 minutes, or until the bacon is crispy and the green beans are tender.
