Whip up this easy, classic breakfast to start your morning on the right foot.

“Mama, I want avocado toast with bacon bits!” The bright-eyed five-year-old exclaimed. “Lemme show you how to make it!” She bounded up from the dining table and reached for a knife. But her mother got there first, drawing her daughter’s tiny hand away from the cutting board. “Slow down, sweetie,” she replied, holding back laughter. “Let me cut and mash the avocado for you, then you can do the rest.”
At the time, I didn’t know what was more shocking… how my sister was able to be so calm when her daughter rushed to grab a knife or how stoked the child was about a simple breakfast. Well, bacon avocado toast might be simple, but it’s packed with a rainbow of savory flavors and satisfying textures. No wonder the kid goes crazy for it!
From the diner to our comfortable kitchens, bacon avocado toast has become a household classic for both quick weekday mornings and weekend brunch. It only takes a few minutes to make a golden brown piece of toast topped with creamy avocado, crunchy bacon, and any other favored toppings. With so many options at your fingertips, it will be hard to run out of ideas, even if you make it every week.

Mashing vs. slicing avocado—which is better?
For the past decade, I’ve been making avocado toast in all kinds of ways. But the main two ways to serve avocado on toast are mashed, like this recipe depicts, or sliced. If you choose the second option, make sure to slice the avocado as thinly as possible so that it lies flat on the bread. The beauty of the avocado mash is not only that it spreads easily and evenly, but also that it stays green for longer because of the lemon juice mixed into it. For the same reason, it’s also slightly tangier and more refreshing.

How do I store leftovers?
Ideally, bacon avocado toast tastes best when it’s fresh, but if you have some leftover avocado mash, that’s alright. Store it in an airtight container with plastic wrap tightly pressed into it on the inside to slow down the browning process. While avocado is safe to eat brown, it’s not as appetizing as when it’s fresh and bright green. Storing a whole piece of toast in the fridge is risky because it will get brown and mushy pretty quickly, so if you’re too full to finish yours, try asking another family member if they’d like to eat your portion so it doesn’t go to waste.

Serving suggestions
My niece particularly enjoys her bacon avocado toast drizzled with a balsamic honey glaze, but she has mature tastes for her age. Feel free to play with lots of toppings until you find your favorite. I suggest diced tomatoes or bell peppers, crumbled goat cheese, and/or sunflower seeds.
Want to kick it up a notch? Top off your toast with Jalapeño Salsa or Tomato Bacon Jam for a spicy twist. Next, pick a savory side like Air-Fryer Breakfast Potatoes, Hash Browns, Parsnip Fries, or Egg Bites With Cottage Cheese. Seems like a vibrant and energizing breakfast to me!
