When it comes to side dishes, you can’t go wrong with coleslaw. But if you’re a big coleslaw fan like me, you like switching things up, and this Asian ramen slaw certainly does that. In some ways, this recipe is basic because it calls for coleslaw mix and store-bought ramen noodles. That’s part of what makes this slaw so special—you can whip this up in about 10 minutes!
Making this coleslaw only requires mixing a few ingredients with the dressing. Sure, it’s simple, but the confluence of flavors is anything but basic. Ingredients like slivered almonds and sunflower seeds add textures and flavors you won’t find in traditional coleslaw recipes. Then there are the umami flavors from the soy sauce, the tangy apple cider vinegar, and the robust sesame oil that anchor the dressing. When everything is combined, you get a flavor that’s definitely not like your standard coleslaw—and that’s a good thing.

- 2 packages (3 ounces each) ramen noodles, flavor packets discarded and noodles crumbled
- 1 cup slivered almonds toasted
- 1/2 cup sunflower seeds
- 1/4 cup green onions thinly sliced
- 1/3 cup vegetable oil
- 1/4 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Instructions
- In a large bowl, combine the coleslaw mix, crumbled ramen noodles, toasted almonds, sunflower seeds, and green onions.

- In a separate small bowl, whisk together the vegetable oil, sugar, apple cider vinegar, soy sauce, and sesame oil until the sugar is dissolved and the mixture is well blended.

- Pour the dressing over the coleslaw mixture and toss well to coat evenly. Serve immediately or chill in the refrigerator for about an hour to allow flavors to meld.
