Asian Ramen Slaw combines crisp veggies, crunchy noodles, and a tangy-sweet dressing for a quick and irresistible side dish!

When it comes to side dishes, you can’t go wrong with coleslaw. But if you’re a big coleslaw fan like me, you like switching things up, and this Asian ramen slaw certainly does that. In some ways, this recipe is basic because it calls for coleslaw mix and store-bought ramen noodles. That’s part of what makes this slaw so special—you can whip this up in about 10 minutes!

Making this coleslaw only requires mixing a few ingredients with the dressing. Sure, it’s simple, but the confluence of flavors is anything but basic. Ingredients like slivered almonds and sunflower seeds add textures and flavors you won’t find in traditional coleslaw recipes. Then there are the umami flavors from the soy sauce, the tangy apple cider vinegar, and the robust sesame oil that anchor the dressing. When everything is combined, you get a flavor that’s definitely not like your standard coleslaw—and that’s a good thing.

Is This Asian Ramen Slaw Healthy?

Considering the limited amount of sodium and saturated fat, Asian ramen slaw is healthy for most diets. This recipe also offers plenty of nutritional value. The coleslaw mix is filled with cabbage and other vegetables, making it a good source of fiber, vitamins, and minerals. The slivered almonds and sunflower seeds also provide some healthy fats. If you’re gluten-free, use rice-based ramen and substitute the soy sauce with tamari or coconut aminos.

Enhance The Slaw

This recipe keeps things simple by using ready-made coleslaw mix as the base. But that’s what makes this slaw so versatile—you can add practically anything you like to this recipe. For instance, broccoli, bell peppers, and mandarin oranges are delicious additions. For added protein, consider tossing in some cooked chicken or shrimp.

How To Make Ahead And Store

If preparing ahead of time, the wet and dry ingredients should be prepared and stored separately. Once you’re ready to serve, they can be combined. Any leftovers should be stored in a covered dish and will remain good in the fridge for up to 2 days.

Serving Suggestions

Since Asian ramen slaw is a side dish, it only makes sense to serve an Asian recipe as the main course. One dish I recommend is Slow-Cooker Paleo Korean Beef Stew. Asian Ramen Slaw

Ingredients

  • 1 package (16 ounces) coleslaw mix
  • 2 packages (3 ounces each) ramen noodles, flavor packets discarded and noodles crumbled
  • 1 cup slivered almonds toasted
  • 1/2 cup sunflower seeds
  • 1/4 cup green onions thinly sliced
  • 1/3 cup vegetable oil
  • 1/4 cup granulated sugar
  • 1/3 cup apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Instructions

  • In a large bowl, combine the coleslaw mix, crumbled ramen noodles, toasted almonds, sunflower seeds, and green onions.

  • In a separate small bowl, whisk together the vegetable oil, sugar, apple cider vinegar, soy sauce, and sesame oil until the sugar is dissolved and the mixture is well blended.

  • Pour the dressing over the coleslaw mixture and toss well to coat evenly. Serve immediately or chill in the refrigerator for about an hour to allow flavors to meld.
