For this simple recipe, it’s the air fryer that makes the potato magic happen. And it truly couldn’t be any easier: All it takes is three simple ingredients, and you have a versatile side dish on the table in about 20 minutes.
Once roasted to crispy perfection, these tasty little potatoes can be dipped and dunked into different sauces, or eaten plain with a dash of salt and pepper. They can be enjoyed all loaded up with toppings or just on their own for those little ones in the family. All around, these are a must when you’re hosting a party and need a crowd-pleaser. But they also work pretty well as a side to your weeknight dinners.

Are Air-Fryer Roasted Potatoes Healthy?
Yes! Made with simple and wholesome ingredients and much less oil than with a traditional fryer, these air-fryer potatoes are a healthy little side dish. Potatoes are a great source of potassium, which keeps your heart healthy, as well as vitamin C and fiber. - 1 pound assorted small potatoes red, purple, and yellow
- 2 teaspoons olive oil

Instructions
- Turn your air fryer to 400°F to heat. While it heats, wash and dry the potatoes well and then cut them into quarters. Toss with olive oil and a good pinch of salt.
