Bite-sized and crispy, these Air Fryer Baby Potatoes come together in less than thirty minutes, and are even better than oven roasties!

I think it’s safe to say that with most meals, you can never go wrong with a side dish of potatoes. Potato-based sides are always guaranteed to be crowd-pleasers.
In particular, these baby potatoes are very simple to make, but are loaded with flavor; while some potato side dishes like dauphinoise potatoes or potato pavé require a lot of time and preparation, these potatoes roast in the air fryer and are done within thirty minutes, with no par-boiling required.
The result is a potato side dish that will satisfy everyone’s taste buds! These small, bite-sized potatoes are crispy on the outside but still soft on the inside, and are lovingly spiced with garlic powder, rosemary, and black pepper.

Are Air Fryer Baby Potatoes Healthy?
Since you’re cooking them in the air fryer, these baby potatoes are a little healthier than some other potato recipes. This is because there is less grease and oil required when cooking in an air fryer, which helps reduce fat and calories.
While light in protein, baby potatoes do provide a healthy dose of potassium, fiber, and vitamin C. This helps to make this a nutritious dish that’s also low in fat and calories. You can make this dish healthier by adding additional nutrients from veggies roasted alongside the potatoes. One of my favorite parts of cooking potatoes is loading them up with my favorite seasonings. This recipe calls for garlic powder, rosemary, salt, and pepper, but remember that you can always do more by adding other spices depending on what you like.
I have found that smoked paprika and Cajun seasoning add great warmth to roast potatoes, and dried herbs like parsley, oregano, and thyme also work well. Lemon zest and Parmesan cheese also go great on the cooked baby potatoes when they’re ready to be served.
No matter your preference, just make sure that the potatoes are evenly coated with your preferred seasoning so that every bite is packed with flavor.

How to Make Ahead and Store
If you know you’re going to be in a rush later, just pre-slice your baby potatoes and store them in an airtight container in the refrigerator until you’re ready to cook them! Just make sure to use them within 2 days because they start to brown very quickly.
With any cooked leftovers, you can store them in the same way, and they should last up to 4 days in the refrigerator. You can also freeze cooked baby potatoes, just store them in a freezer-safe bag with the air pushed out of it, and defrost them within 3 months.
Serving Suggestions
As mentioned, you can combine these baby potatoes with anything you want. One of my personal favorites is beef, including this recipe for Crock-Pot Beef Stew.

- 1.5 pounds baby potatoes halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

Instructions
