Ingredients
- 1 pound assorted small potatoes red, purple, and yellow
- 2 teaspoons olive oil
- Salt
Instructions
- Turn your air fryer to 400°F to heat. While it heats, wash and dry the potatoes well and then cut them into quarters. Toss with olive oil and a good pinch of salt.

- Lay the potatoes cut-side down in your air-fryer mesh basket and cook for 12 minutes. Then, flip the potatoes and cook until golden brown and tender, about another 8 to 10 minutes.

- Serve and enjoy!
